Vegetable Soup

Place the onions, carrots, celery and tomatoes in a pot with our quarts of water and bring to a boil
- 2 onions, chopped
- 4 carrots, sliced
- 4 celery stalks, sliced
- 3 tomatoes, chopped
- 1/4 cup rice
- 2 cubes chicken bouillon
- 2 zucchini, sliced
- 3 tbs tomato puree
- 2 potatoes, peeled and chopped
- Salt
- Pepper
- dash of garlic powder
Barbecue Bible Mop & Dip

Yield: Makes 2-1/2 cups Melt the butter over medium-low heat in a saucepan
- 1/2 1/2 1/2 cup butter
- 2 2 2 cups white vinegar
- 2 2 2 tablespoons freshly ground black pepper
- 2 2 2 tablespoons sugar
- 1/2 to 1 1/2 to 1 1 teaspoon cayenne
- 1 1 to tablespoon hot sauce (I use Frank's RedHot), or more to taste
- 1 1 1 tablespoon salt
Kentucky Fried Chicken Cole Slaw

Cut cabbage and carrots into small pieces about the size of rice kernels
- 8 cups finely chopped cabbage
- 1/4 cup carrot, shredded
- 1/3 cup sugar
- 1/2 teas. salt
- 1/8 teas. pepper
- 1/4 cup milk
- 1/2 cup mayonnaise
- 1/4 cup buttermilk
- 1 1/2 tbsp white vinegar
- 2 1/2 tbsp lemon juice
Stuffed Pumpkin

This is a great and easy addition to a Thanksgiving dinner
- In a bowl combine:
- Take a pumpkin, a small pie pumpkin works best. Cut off the top and scoop out the “innards” as if you were making a jack-o-lantern.
- Some apples (about 4 or 5; depending on the size of the pumpkin) cut into small pieces but not peeled. (Try some yellow delicious and some jon-a-golds.)
- 1/2 About 1/2 cup of walnuts (or pecans)
- 1/2 About 1/2 cup of craisins.
- Sprinkle that mixture with about a tablespoon of lemon juice to give it a little zip.
- In a small bowl combine:
- 1/2 About 1/2 cup brown sugar depending on the sweetness of the apples you used.
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ground allspice
Flounder Rolls with Pesto

In a food processor, combine the basil, garlic, Parmesan and 2/3 cup of olive oil and process to a puree
- 5 cups basil leaves, packed (3 1/2 ounces)
- 2 garlic cloves, chopped
- 1/4 cup freshly grated Parmesan cheese
- 2/3 cup extra-virgin olive oil, plus more for drizzling
- Salt and freshly ground pepper
- Four 6- to 7-ounce flounder or sole fillets
- 1 small zucchini, cut into matchsticks
- 1 red bell pepper, seeded and julienned
Spinach Cheese Squares

Preheat oven to 350 oven. In a 9x13x2 pan melt butter in oven
- 4 tbsp. butter
- 1 tsp. salt
- 3 eggs
- 1 tsp. baking powder
- 1 cup flour
- 1 lb. grated Monterey Jack cheese
- 1 cup milk
- 2 pkg. chopped spinach (thawed & drained)
Classic Hot Wings

Preheat the oven to 325 degrees F
- Canola oil, for frying
- 24 chicken wing parts (12 wings separated into 2 pieces)
- One 12-ounce bottle cayenne hot pepper sauce, such as Frank's
- 1 stick butter
- Several dashes Worcestershire sauce
- Several dashes hot sauce, such as Tabasco
- Blue cheese dip, for serving
- Celery sticks, for serving
Pancetta and Turkey Meatloaf Sandwiches

Preheat the oven to 375 degrees F
- 1/2 cup plain dried bread crumbs
- 1/4 cup chopped flat-leaf parsley
- 2 large eggs, lightly beaten
- 2 tablespoons whole milk
- 1/2 cup grated Romano
- 1/4 cup chopped sun-dried tomatoes
- 3/4 teaspoon salt
- 3/4 teaspoon freshly ground black pepper
- 1 pound ground turkey, preferably dark meat
- 10 ounces sliced pancetta, about 10 slices
- 3 cups arugula, about 3 ounces
