Chocolate Raspberry Truffles

- 20 oz. bittersweet chocolate, chopped in small pieces
- 3/4 cup, plus 2 tablespoons heavy cream
- 6 tbl corn syrup
- 2 tbl unsalted butter
- 6 to 7 tbl raspberry liqueur, such as framboise
- Cocoa powder, for dusting

Basic Crepe Batter: Combine the milk, water, eggs, flour, salt and sugar in a blender
- 1 cup milk
- 1/4 cup cold water
- 2 eggs
- 1 cup all-purpose flour
- Pinch salt
- 1 tablespoon sugar
- 3 tablespoons unsalted butter, melted, plus more for sauteing the crepes

- 2 1/2 - cups flaked coconut

- 1/2 cup (1 stick or 4 ounces) butter, softened
- 2/3 cup light brown sugar, packed
- 1 egg
- 1/2 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt (I often use a half teaspoon, but I like more salt in my baked goods)
- 1 1/2 cups rolled oats
- 3/4 cup raisins
- 1/2 cup walnuts, chopped (optional)
