Chili and Cheese Rice Casserole

Preheat oven to 350 F. Lightly spray 2-quart casserole with nonfat cooking spray
- 1 tsp vegetable broth
- 1 cup chopped onion
- 1/2 cup chopped celery
- 3 cups fat-free rice, cooked
- 1 (15 ounce) can corn kernels, drained
- 1 (4 ounce) can chopped green chilies (or 4 ounces, fresh)
- 1/2 tsp onion powder
- 2 cups fat-free shredded Cheddar cheese
- 1 1/2 cups skim milk
- 3/4 tsp chili powder
- Pepper, to taste
Pumpkin Muffins

Cranberry-Blueberry Chutney

- 3/4 cup fresh or frozen blueberries

- 1 egg
- 1 cup molasses

- 1 1/2 tsp warm water

Pineapple Granita
