- 1 1/2 tbsp olive oil
- 1 small white onion, chopped

- 2 tsp dried rosemary or 3 tbsp fresh
- 1 bay leaf
- 1/2 tsp dried red pepper flakes
- 2 cups water
- 1/2 cup julienned sun-dried tomatoes in oil, drained
- 1 medium carrot, chopped
- 2 (16 ounce cans each) cannelini beans, drained and divided
- 2 tbsp grated Parmesan or Pecorino Romano cheese
- Salt, to taste
- Pepper, to taste

- 4 medium baking potatoes
- 3 medium sweet potatoes
- 2 medium pears, peeled and cubed

- 1 1/2 cups store-bought fresh and chunky hot salsa, drained

- Crust:
- Makes 1 (9-inch) quiche cut into 6 servings.
- 1/2 cup butter, softened
- 4 ounces cream cheese, softened
