Preheat oven to 350 F. In a large mixing bowl, cream butter and sugar together until light and fluffy
- 1 cup butter or margarine
- 1 cup packed brown sugar
- 1/2 cup granulated sugar
- 1 tsp vanilla
- 2 eggs
- 2 cups unbleached all-purpose flour
- 1/2 tsp salt
- 2 tsp baking soda
- 2 cups quick oats
- 2 cups (12 ounces) Ambrosia All-Natural Semi-Sweet Chocolate Chips
Sweet Potato Pudding

In a large saucepan, boil sweet potatoes in water until tender
- 1 pound sweet potatoes, peeled and cut into chunks
- 6 eggs, lightly beaten
- 3 cups confectioners' sugar
- 1 1/2 cups butter, softened

- 1 tsp ground nutmeg
- 1/2 tsp grated lemon peel
- 1/2 cup brandy
