"A yummy salad with a sweetly spiced dressing
- Dressing:
- 1/3 cup canola oil
- 2 tbsp champagne or white wine vinegar
- 1 tbsp sherry
- 1/2 tsp freshly grated ginger
- 1/4 tsp allspice
- 1 tsp agave nectar or syrup
- Salad:
- 2 cups broccoli, cut into bite-sized pieces
- 1/2 cup walnuts
- 1/4 cup red onion, diced
- 1 to 2 ripe pears, cut into thin slices (about 1 3/4 cup after slicing)

Shrimp Dip

This is one of my Mother's (Jeannette Costigan's) recipes
- 1 can cream of shrimp soup, frozen
- 1 package (3 oz.) cream cheese, softened
- 1 tsp. lemon juice
- Dash garlic powder
- Dash paprika
- Thaw soup in can by placing it in a pan of hot water. In about 30 minutes the soup should be thawed. Gradually blend soup and other ingredients by beating with rotary beater or using electric mixer. Chill.

Low Fat Pumpkin Roll Cake

- 3 large eggs
- 1 cup granulated sugar

- 1 tsp ground nutmeg
- 1 tsp vanilla
- 1 tsp fresh lemon juice
- Icing:
- 1 cup confectioners' sugar
- 1 (8 ounce) package Neufchatel cheese
- 1 tsp vanilla

In a 2-quart saucepan, melt the butter
- 1/4 cup butter
- 1 medium-size potato, cut into 1/2-inch cubes
- 1 carrot, chopped
- 1 stalk celery, chopped
- 1 medium-size onion, chopped
- 1/2 green pepper, chopped
- 3 cups Vegetable Stock (recipe in collection)
- Dash of pepper
- 2 cups milk
- 1/4 cup nonfat dry milk
- 1/2 cup whole wheat pastry flour
- 3 cups shredded Cheddar cheese (12 ounces)
- 1 tbsp chopped fresh parsley
- Paprika
Light Apple Pie

- Crust:
- 2 cups all-purpose flour, divided
- 6 tbsp ice water
- 1 tsp cider vinegar
- 2 tbsp powdered sugar
- 1/2 tsp salt
- 7 tbsp vegetable shortening
- Filling:
- 8 cups thinly sliced peeled Braeburn apples (about 8 medium)
- 1 tbsp fresh lemon juice
- 2/3 cup sugar
- 3 tbsp all-purpose flour
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/8 tsp salt
- Remaining Ingredients:
- Cooking spray
- 1 large egg white, lightly beaten
- 1 tbsp sugar

Moose's Cabbage Soup

- 4 tbsp butter
- 2 large onions, diced
- 1 clove garlic, minced
- 1 large head of green cabbage, quartered and chopped
- 1 lb unpeeled potatoes, cubed (russet or red)
- 1 lb carrots, sliced in 1/4-inch rounds
- 1/4 cup dried parsley
- 2 tbsp dried oregano
- Salt, to taste

- 4 eggs
- 3/4 cup honey
- 1/2 cup melted butter
- 1 teaspoon vanilla extract
- 2 tablespoons bourbon
- 3/4 cup sugar
- 1/4 cup brown sugar
- 1 tablespoon flour
- 1 cup chopped pecans
- 1/2 cup semisweet chocolate mini-morsels
- 1 (9-inch) unbaked pie shell
