- 1 bag (12 ounces) cranberries (3 cups)
- 1 small yellow or red pepper, chopped
- 1/2 small red onion, finely chopped
- 2 cups apple juice or apple cider
- 1 cup light brown sugar, packed
- 1/2 cup cider vinegar
- 1/2 cup dried apricots (4 ounces), cut into thin strips
- 1/3 cup golden raisins
- 1/3 cup crystallized ginger, chopped
- 1/2 cinnamon stick
- 1/2 tsp salt
- 1/4 tsp crushed red pepper
- Pinch ground cloves
