- 2 cups cubed, seeded watermelon
- 1 pint fresh strawberries; cleaned, hulled, and halved (about 1 cup)
- Juice of one orange, or 2 tbsp frozen orange juice
- 1 1/2 tsp honey
- Dash of cinnamon
Vegetable Nut Roast

Combine all the ingredients in a bowl
- 1 cup carrots, grated
- 1 small onion, finely chopped
- 1/2 cup celery, diced
- 1/4 cup sunflower seeds
- 1/4 cup walnuts, coarsely chopped
- 1 egg, beaten
- 2 tbsp butter, melted
- 1 tbsp tomato juice
- 1 cup whole wheat bread crumbs
- Salt, to taste
- Pepper, to taste

French Silk Chocolate Pie

Heat oven to 450 F. Prepare pie crust as directed on package for one-crust baked shell using 9-inch glass pie pan
- Crust:
- 1 refrigerated pie crust (from 15 oz package, softened as directed on package)
- Filling:
- 3 oz unsweetened chocolate, cut into pieces
- 1 cup butter (do not use margarine), softened
- 1 cup sugar
- 1/2 tsp vanilla
- 4 pasteurized eggs or 1 cup refrigerated or frozen fat-free cholesterol-free egg product, thawed
- Topping:
- 1/2 cup sweetened whipped cream
- Chocolate curls, if desired
Huckleberry Bars with Cream Cheese Frosting

Huckleberry Bars: Melt margarine, remove from heat
- Huckleberry Bars:
- 1/2 cup margarine
- 2 cups sifted flour
- 2 cups huckleberries
- 1 tsp vanilla
- 2 eggs
- 1/2 tsp salt

- 2 tsp baking powder
- 1 cup chopped nuts
- Cream Cheese Frosting:
- 2 tbsp butter or margarine
- 1 tbsp cream
- 1/2 package (4 ounce size) cream cheese, at room temperature
- 2 1/2 to 3 cups powdered sugar
Easy Eggplant Parmesan

Preheat oven to 350 F. Dip eggplant slices in egg, then in bread crumbs
- 3 eggplant, peeled and thinly sliced
- 2 eggs, beaten
- 4 cups Italian seasoned bread crumbs
- 6 cups vegetarian spaghetti sauce, divided
- 1 (16 ounce) package mozzarella cheese, shredded and divided
- 1/2 cup grated Parmesan cheese, divided
- 1/2 tsp dried basil

- 3 cups all-purpose flour
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground ginger
- 2 teaspoons cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1 cup butter or margarine, cut into dots and brought to room temperature
- 1/2 cup honey
Honey-Glazed Frankfurters

This is one of my Mother's (Jeannette Costigan's) recipes
- 1 cup orange juice
- 1/3 cup honey
- 1/2 cup Madeira wine
- 2 Tbsp. prepared mustard
- 1 pound cocktail frankfurters
- 1/4 tsp. oregano
- Heat all ingredients except frankfurters in a skillet over low heat until a slightly thick syrup forms. Stir frequently.
- Add the frankfurters and continue heating and stirring until they become nicely glazed all over. Serve hot on toothpicks from a chafing dish.
