Texas Style Chili

*NOTE: When working with chile peppers, always wear rubber gloves and be careful not to touch your eyes or skin
- 1/4 cup rendered bacon grease or vegetable oil
- 3 pound tri-tip or boneless sirloin or chuck roast, cubed
- 1 large white onion, chopped
- 3 large jalapeno or serrano peppers, stemmed, seeded and chopped
- 5 cloves garlic, peeled and crushed
- 5 New Mexican green or red chiles, roasted, stemmed, seeded and chopped
- 6 tablespoons chili powder
- 1 tablespoon ground cumin
- 2 teaspoons Mexican oregano
- 2 teaspoons salt
- 1 teaspoon freshly ground black pepper
- 2 large tomatoes, peeled, seeded, and chopped
- 1 (12-ounce) bottle Lone Star or Shiner Bock beer
- 2 ounces tequila
- 3 chipotle chiles in adobo, chopped
- 4 to 5 cups beef stock
- 1/4 cup to 6 tablespooons masa harina
- Chopped fresh cilantro leaves, garnish
- Finely chopped white onions, garnish
- Sour cream, garnish
- Fresh hot cornbread, accompaniment
French Onion Soup

Melt the stick of butter in a large pot over medium heat
- 1/2 cup unsalted butter
- 4 onions, sliced
- 2 garlic cloves, chopped
- 2 bay leaves
- 2 fresh thyme sprigs
- Kosher salt and freshly ground black pepper
- 1 cup red wine, about 1/2 bottle
- 3 heaping tablespoons all-purpose flour
- 2 quarts beef broth
- 1 baguette, sliced
- 1/2 pound grated Gruyere
Gingerbread Cupcakes with Pumpkin Frosting

Preheat the oven to 375 degrees F
- 1 box prepared gingerbread mix, prepared to package directions for cake
- 8 ounces cream cheese, softened
- 1/2 cup canned pumpkin puree
- 1/4 teaspoon grated nutmeg
- 1 orange, zested
- 1/2 teaspoon vanilla extract
- 3 1/2 cups powdered confectioners' sugar
- Shaved crystalized ginger, for garnish
Coconut Cake

Preheat the oven to 350 degrees F
- For the frosting:
- 3/4 pound (3 sticks) unsalted butter, at room temperature, plus more for greasing the pans
- 2 cups sugar
- 5 extra-large eggs, at room temperature
- 1 1/2 teaspoons pure vanilla extract
- 1 1/2 teaspoons pure almond extract
- 3 cups all-purpose flour, plus more for dusting the pans
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 cup milk
- 4 ounces sweetened shredded coconut
- 1 pound cream cheese, at room temperature
- 1/2 pound (2 sticks) unsalted butter, at room temperature
- 3/4 teaspoon pure vanilla extract
- 1/4 teaspoon pure almond extract
- 1 pound confectioners' sugar, sifted
- 6 ounces sweetened shredded coconut
Caramelized Onion and Goat Cheese Tarts

Preheat oven to 450°F. and butter a baking sheet
- 1 large onion
- 1 tablespoon unsalted butter
- 1/4 cup water
- 1/2 teaspoon chopped fresh thyme leaves
- 1 puff pastry sheet (from a 17 1/4-ounce package frozen puff pastry sheets, thawed according to package instructions)
- 1 ounce soft mild goat cheese at room temperature
Sugar Cookies

Sift together flour, baking powder, and salt
- 3 cups all-purpose flour
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup sugar
- 1 egg, beaten
- 1 tablespoon milk
- Powdered sugar, for rolling out dough
Eggplant Parmesan

Peel the eggplant and slice long ways into 1/4 inch slices
- Eggplant:
- 3 pounds eggplant (Choose the large variety. Make sure they are firm and smooth. Also, choose male eggplants. They have fewer seeds and have a rounder, smoother bottom)
- 1 cup flour
- salt
- generous amounts of olive oil
- 1 cup grated parmigiano-reggiano
- 1/2 pound buffalo-milk mozzarella (if the balls are small, get two)
- Sauce:
- 2 28 ounces cans of San Marzano (any brand is fine) canned whole peeled tomatoes (add another can if you want extra sauce left over)
- 3 cloves garlic, thinly sliced
- enough olive oil to cover the pan
Nachos

In a large saucepan or Dutch oven, add butter and melt over medium heat
- 6 tablespoons butter
- 8 medium size onions, sliced thinly
- 4 thyme sprigs, leaves stripped
- 1/2 cup sherry
- 4 cups brown chicken stock
- 2 cups veal stock
- Salt and freshly ground black pepper
- French bread croutons
- 2 cups grated Gruyere cheese
Blackberry Caipirinha

In a shaker or pint glass, muddle/mash up the blackberries and the sugar with two of the lime wedges
- 6-8 plump blackberries
- 1 teaspoon white sugar
- 1/2 lime, cut into 3 wedges
- 2 ounces cachaça (or substitute white rum)
- 3/4 cups ice cubes
Cauliflower with Bacon & Mushrooms

1. Add the bacon to a skillet set over medium-low heat
- 1/4 pound bacon, sliced into 1/4-inch strips
- 2 tablespoons butter
- 1/2 head cauliflower, cored and florets chopped
- 5 ounces mushrooms, sliced
- 3 shallots, chopped
- 1/2 cup parsley, chopped
- kosher salt and pepper
