Asian Chicken Salad

- Dressing:
- 1/4 cup reduced-sodium soy sauce
- 3 tablespoons rice-wine vinegar
- 1 1/2 tablespoons brown sugar
- 1 1/2 teaspoons sesame oil
- 1 1/2 teaspoons chile-garlic sauce (see Ingredient notes)
- 3 tablespoons canola oil
- 1 tablespoon minced fresh ginger
- 2 cloves garlic, minced
- 1 tablespoon tahini paste
- 3/4 cup reduced-sodium chicken broth or reserved chicken-poaching liquid
- Salad:
- 2 tablespoons sesame seeds
- 8 cups shredded napa cabbage (1 small head; see Ingredient notes)
- 1 1/2 cups grated carrots (2-3 medium)
- 5 radishes, sliced (about 1 cup)
- 1/2 cup chopped scallions
- 3 1/2 cups shredded skinless cooked chicken (about 1 1/2 pounds boneless, skinless chicken breast) (see Tip)
Cinnamon Pecan Twists

Combine sugar, pecans, and cinnamon in a mini-chopper and process until sandy

- 1 tablespoon olive oil
- 3 ounces pancetta, chopped
- 1 medium onion, chopped
- 3 (3/4-inch-thick) slices rustic rye bread (each about 5 3/4 X 3 3/4 inches), cubed
- 6 cups reduced-sodium chicken broth
- 1 (28-ounce) can diced tomatoes in juice
- 1/4 cup coarsely chopped fresh basil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon crushed dried red pepper leaves
- salt and freshly ground black pepper
- 1/4 cup mascarpone cheese
- 1/4 cup sour cream

To Make the Sauce: Melt the butter in a medium, heavy saucepan over medium-low heat
- Sauce:
- 2 tablespoons unsalted butter
- 4 teaspoons all-purpose flour
- 1 1/4 cups whole milk
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- Pinch of ground nutmeg

- 1 (15-ounce) container whole-milk ricotta cheese
- 1 (10-ounce) box frozen chopped spinach, thawed and squeezed dry (Note: Be sure to squeeze the spinach totally dry to avoid a watery dish)
- 1 cup plus 2 tablespoons freshly grated parmesan cheese
- 3 ounces thinly sliced prosciutto, chopped
- 1 large egg, lightly beaten
- 3/4 teaspoon salt, plus more for pasta
- 1/2 teaspoon freshly ground black pepper
- 12 dried lasagna noodles

Miso Marinated Blackened Cod

Over a double boiler, combine miso, sugar, sake, and mirin and whisk until sugar dissolves
- 3/4 cup white miso
- 1/2 cup sugar
- 1/4 sake
- 6 tablespoons mirin
- 6 to 8 black cod fillets or fillet pieces
Miso Stir Fry

Heat oil in a large skillet over medium high heat
- 1 teaspoon sesame oil
- 1 tablespoon canola oil
- 1 medium onion, cut in half and sliced thinly
- 1 Tablespoons minced fresh ginger
- 3 cloves garlic, chopped
- 1 medium sized carrot, peeled and sliced very thin
- 2 cups broccolini
- 1 cup shredded green cabbage
- 1 red pepper, sliced thinly
- 8 oz seitan
- 2 T light miso
- 2 T tamari (soy sauce)
- 2 T rice vinegar
- Pinch crushed red pepper (optional)
Asian Green Bean Salad

In a bowl toss all ingredients together
- 1 pound long green beans, trimmed, cooked, and cooled
- 1 teaspoon crushed red pepper flakes
- 2 tablespoons rice vinegar
- 1 teaspoon chopped garlic
- 1/4 cup olive oil
- 2 tablespoons sesame oil
- 2 cups cherry tomatoes, halved
- 2 tablespoons crushed toasted peanuts
- Salt and pepper
White Bean Soup Shooters

Fry the bacon in a medium saucepan over medium heat until halfway done, 3 minutes
- 1/2 strip bacon, diced
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon unsalted butter
- 2 shallots, chopped
- 2 15-ounce cans cannellini or other white beans, drained and rinsed
- 6 leaves fresh sage, chopped
- 4 cloves garlic, chopped
- 3 cups low-sodium chicken broth
- 1/2 cup heavy cream
- 1/4 teaspoon cayenne pepper
- Kosher salt
- 3 slices crusty bread, toasted
- 2 ounces goat cheese, at room temperature
- Freshly ground black pepper
Wolfgang's Potato Latkes

Grate potatoes and onions on a large-hole grater
- 8 medium potatoes, peeled
- 1 medium onion
- Lemon juice
- 1 cup flour
- 1 cup milk
- 1 egg
- 1 tablespoon baking powder
- 1/8 cup melted butter

Coq Au Vin

In a large, heavy skillet or Dutch oven, fry the bacon over medium heat until crisp
- 6 slices bacon
- 2 chicken breasts
- 2 thighs
- 2 legs
- 1/2 cup all-purpose flour
- Kosher salt
- Pepper
- 2 cloves garlic, chopped
- 2 cups pearl onions, peeled
- 2 cups mushrooms
- 2 carrots, cut in 2-inch pieces
- 1/4 cup cognac or brandy
- 1 bottle Burgundy wine
- 2 cups chicken broth
- 5 sprigs fresh thyme
- 2 teaspoons herbs de Provence
- 3 bay leaves
- Fresh parsley, chopped, for garnish
