Lemon Cake with Cream Cheese Filling

Mix until smooth. Place half of cake mix in greased 9x13 pan
- 1 lemon cake mix
- 3 eggs
- 1/3 c. oil
- 1 c. water
- Mix until well blended and smooth
- 1 (8 oz) pkg. cream cheese
- 1 T. cornstarch
- 2 T. butter
- 1/4 c. sugar
- 1 egg
- 2 T. milk
- 1/2 tsp. vanilla
Quick Scalloped Potatoes

Cook, peel, and slice potatoes
- 4-5 med. Potatoes
- 3-4 green onions
- 1 can cream of chicken soup
- 1 12 oz. carton sour cream
- 2 c. shredded cheddar cheese
- Cook, peel, and slice potatoes. Chop onions and mix with soup, sour cream and cheese. Pour over sliced potatoes. Bake at 350 for 40 min.
Taco Soup

Brown hamburger. Simmer 15 min--dressing, onions, chili beans and powder, tomatoes with hamburger
- 1 lb. hamburger
- 1 -28oz can kidney beans
- 1 -28oz can puréed tomatoes
- 1 -14oz can corn
- 1 pkg. taco seasoning
- do not drain liquids
Pumpkin Pie

Makes 2 pies
- 2 beaten eggs
- 1 c. milk
- 1/4 c. Karo dark syrup
- 3/4 c. brown sugar
- 1 tsp. cinnamon
- 1 tsp. pumpkin pie spice
- 1 can Libby's pumpkin
- Makes 2 pies
Date and Chocolate Chip Cake

Mix ingredients, add dates or raisins
- 1 c. dates or raisins
- 1 c. boiling water
- Mix and cool.
- 1 tsp. soda
- 1 c. shortening (part butter)
- 1 c. sugar
- 2 eggs
- 1 1/2 c. flour
- 1 T. cocoa
- Vanilla
Banana Slush

Puree bananas until smooth, add remaining ingredients
- Add:
- Blend: 3+ bananas
- 1 can lemonade concentrate
- 1 can orange juice concentrate
- 1 24 oz. can pineapple juice
- 3 c. water
Peanut Butter Chip Cookies

Cream Crisco or butter, sugar, brown sugar and vanilla until light and fluffy
- 1 c. Crisco or 3/4 c. butter
- 1 c. sugar
- 1 tsp. vanilla
- 2 eggs
- 1 tsp. baking soda
- 1/2 c. packed brown sugar
- 2 c. flour
- 2 c. Reese's peanut butter chips
Crazy Cake

Mix together. Don't overbeat
- Mix in bowl. Make hole in middle and add:
- 3 c. flour
- 2 c. sugar
- 1/3 c. cocoa
- 2 tsp. soda
- 3/4 c. salad oil
- 2 T. vinegar
- 1 tsp. vanilla
- 2 c. water
- Mix together. Don't overbeat. Do not grease pan. Bake 35 min. in 350 oven.
Best Homemade Kahlua

Bring coffee to a boil in dutch oven or large pot
- 1 12-cup pot very strong chocolate coffee
- 2 lbs. light brown sugar
- 4-6 T vanilla extract
- 1 bottle 190 proof Clear Springs or Everclear

- 1/2 c. brown sugar

- 1/4 c. sugar
- 1 c. oatmeal (uncooked)
