Creamy Lemon Basil Quinoa Primavera

Super Easy and fairly cheap
- ◾1 and 1/2 cups of uncooked quinoa, rinsed and drained
- ◾2 and 1/2 cups of water (to cook the quinoa)
- ◾1/2 cup of sliced blanched almonds
- ◾2 cups of fresh basil leaves
- ◾1/4 cup of olive oil
- ◾1 clove of garlic
- ◾juice of one medium lemon
- ◾3/4 cup of reduced fat feta cheese (or 1/2 cup of vegan cream cheese)
- ◾1 large bunch of asparagus, trimmed and cut into 1-inch pieces
- ◾1 cup of frozen edamame or greens peas
- ◾2 cups of broccoli florets
- Note: you can use any of your favourite green spring vegetables for this quinoa primavera
Rosy Sangria

Flirty Summer Cocktail
- 1/2 bottle of Rosangel tequila
- 1/2 bottle of white wine
- 1/2 cup sugar
- 1 ounce orange juice
- 2 ounces cranberry juice
- 2 oranges, 1 lemon, 1 lime, sliced
- 1 bunch of grapes, halved
- 1 apple, diced
- 1/2 liter club soda
Slow-Roast Beef Brisket with Potatoes and Onions

Preheat oven to 400 degrees
- 4 to 5 pound piece of boned, rolled beef brisket, tied with string
- 4 to 5 garlic cloves, coarsely chopped
- Good handful of thyme sprigs
- 2 to 3 tablespoons canola or olive oil
- Sea salt and freshly ground black pepper
- 2 to 2 1/2 pounds potatoes peeled and cut into 1 1/2 inch chunks
- 1 pound small onions or shallots, peeled

- 2.5 cups boiling water
- 3 tablespoons dried spearmint leaves
- 1/2 cup rum

- 1/4-1/3 cup agave nectar
- Fresh mint sprigs
- Lime wedges

Banana Empanadas

- Pastry
- 1 1/2 cups all-purpose flour
- 1 pinch of salt
- 3 tablespoons sugar
- 8 tablespoons (1 stick) cold unsalted butter, cut into small pieces
- 1 large egg yolk, lightly beaten
- 1/4 cup ice water
- Filling
- 2-3 very ripe bananas (or, ideally, plantains)
- 1/4 cup brown sugar
- 1 jar/can jackfruit (optional but highly recommended)
