Smothered Chicken

Beat eggs. Mix in milk. In separte bowl, mix flour, salt, pepper and poutlry seasoning
- 4 boneless chicken breasts
- 8 oz. jar sliced mushrooms
- 1 med. onion (sliced)
- 8 oz. pkg. Jack cheese (sliced)
- 2 eggs
- 1/4 c. milk
- 1 c. flour
- 1/2 tsp. salt
- 1 tsp. pepper
- 1 tsp. poultry seasoning
- 2 tsp. butter
- 2 oz. vegetable oil
Bananas Royale

Slice each bananas in half, then again lengthwise
- 4 med. bananas, peeled
- 1/3 c. butter or margarine
- 1/3 c. firmly packed brown sugar
- 1/4 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/4 c. light cream
- Vanilla Ice Cream
Classic Pork Chop with Apples Purée

Cut pork chop into small pieces
- 1 boneless pork chop, cooked
- 1 cup Enchanting Apple **
Bean Dip

Mix beans and taco seasoning together and layer on plate 1/2 to 1" think
- 1 large can El Paso refried benas
- 1 pkg. Lawry's taco seasoning
- Mild picante sauce
- Sour cream, mixed with 2 T. Mayonnaise
- Guacamole
- Chopped lettuce, chopped tomatoes, finely chopped green onions, chopped olives and shredded cheese
Sugaring-Off Party

Boil maple syrup until it spins a fine thread (about 236 degrees)
- Maple Syrup
- Snow or fine crushed ice
- Pickles, doughnuts and coffee
Scalloped Corn

Mix altogether and pour into greased 9x13-inch baking pan
- 1 can whole kernel corn (undrained)
- 1 can creamed corn
- 2 eggs, beaten (or egg beaters)
- 1 box Jiffy cornbread mix
- 1 c. sour cream
- 2 T. onion flakes
- 1 stick oleo, melted
Taco Dip

Brown ground beef, drain. Add taco seasoning and water, according to pacakge
- 1 1/2 lb. ground beef
- 1 can refried beans
- 1 pkg. taco seasonings
- 1 bottle taco sauce
- 16 oz. sour cream
- Grated sharp cheddar cheese
German Peach Cobbler

Cream together sugar and soft butter
- 1 c. sugar
- 1 stick butter, softened
- 1/2 c. milk
- 1 c. flour
- 1 tsp. baking powder
- 10 or more medium-size peaches (canned peaches works find)
Colorful Corn Salad

In a large bowl, combine the first 12 ingredients
- 2 (10 oz) pkg frozen corn, thawed
- 2 c green pepper, diced
- 2 c red pepper, diced
- 2 c celery, diced
- 1 c fresh parsley, minced
- 1 c green onions, chopped
- 1/2 c shredded Parmesan cheese
- 2 tsp ground cumin
- 1 to 1 1/2 tsp salt
- 3/4 tsp pepper
- 1/2 tsp hot pepper sauce
- 1/8 tsp cayenne pepper
- 3 T olive oil
- 2 cloves garlic, minced
- 6 T lime juice
Buttercream Icing

For medium consistency: In large bowl, cream shortening and butter with electric mixer
- 1 cup shortening
- 1 cup butter, softened
- 2 tablespoon vanilla extract
- 8 cups sifted confectioners' sugar (about 2 lb.)
- 4 tablespoons milk
