Zucchini Brownies
By dkosik
Melt shortening over very low heat with hot water, add sugar and beat well to cool
- 3/4 c. oleo
- 2 T. hot water
- 1 2/3 c. brown sugar
- 2 eggs
- 2 c. flour
- 2 tsp. baking powder
- 1 tsp. salt
- 1 1/2 to 2 c. shredded zucchini
- 1 c. chopped nuts
- 1 c. butterscotch chips
Bean Dip

Mash beans. Add remaining ingredients
- 1 can black beans (drain and rinse)
- 1-4.5 oz. can green chopped chilies
- 1/2 c. mayonnaise
- 1/2 c. sour cream
- 1 tsp. chili powder
- 1/2 tsp. garlic powder
- 2 T. salsa
Crabmeat Casserole

Mix all ingredients, except margarine, 1 cup cheese and corn flakes, and add cooked noodles
- 1 lb. crab sticks (shredded)
- 1 can cream of shrip soup
- 2 c. Cheddar cheese (shredded)
- 1/2 c. mayonnaise
- 2/3 c. milk
- 1/2-12 oz. bag FINE noodles
- 1 c. crushed corn flakes
- 1 T. melted margarine
Aunt Barb's Corn Dip

Drain corn and mix together
- 1/2 c. mayo
- 1/2 c. sour cream
- 1 can whole corn
- 1 (8 oz.) pkg. shredded cheddar cheese
- 4-6 green onions, chopped
- Optional: drained green chili tomatoes
- Add to taste: Louisiana hot sauce
Kosher Dill Pickles

Wash cucumbers. Let stand in cold water over night
- 20-25 4-inch cucumbers
- 1/8 tsp. powdered alum
- 1 clove garlic
- 2 heads dill
- 1 red hot pepper
- 1 quart cider vineager
- 3 quarts water
- grape leaves
- 1 c. coarse medium salt
Never Fail 3 minute Frosting

Put all but vanilla in double boiler with water boiling
- 1 c. sugar
- 1/2 tsp. cream of tarter
- 3 T. water
- 1/4 tsp. salt
- 2 unbeaten egg whites
- 1 tsp. vanilla
Giant Meatball Subs

Preheat oven to 350 degrees
- -MINUTE MARINARA SAUCE:
- 1 1/2 lbs ground beef or turkey
- 1 large egg, beaten
- 1 c Italian bread crumbs
- 1 medium onion, chopped fine
- 4 cloves garlic, crushed and minced
- 1/2 tsp crushed red pepper flakes
- 2 tsp Worcestershire sauce
- 1/4 c flat-leaf parsley leaves, chopped
- 1/4 c grated Parmigiana or Romano cheese
- Coarse salt and black pepper
- 4 of your choice of sub rolls
- 1 (10 oz) bag shredded provolone or Italian 4-cheese blend
- Shredded basil (sweet) or shredded arugula (spicy) leaves, for garnish
- 2 T extra virgin olive oil
- 4 cloves garlic, crushed and chopped
- 1/2 tsp crushed red pepper flakes
- 2 T flat-leaf parsley leaves chopped
- 1/2 tsp dried oregano
- 1 (28 oz) can crushed tomatoes
- 1 (14 oz) can chunky style crushed tomatoes
- Salt and freshly ground black pepper
Caramel Cookies

Combine all ingredients and knead as you would bread dough
- 4 c. brown sugar
- 4 eggs
- 1 c. shortening
- 5 c. flour
- 1 c. nuts
- 1 tsp. baking soda
- 1 tsp. cream of tartar
Salsa Delight

Mix all ingredients together
- 2 cans sweet corn
- 2 cand black beans
- 1 jar salsa
- 1 onion, chopped
- 1/2 c. olive oil
- 2 tsp. cumin
- 2 tsp. seasoning salt
- 2 tsp. garlic salt
- 1/2 tsp. lime juice
Italian Zucchini Pie

In margarine, cook and stir zucchini and onion for 10 minutes
- 4 c. thin sliced zucchini
- 1 c. chopped onion
- 1/4 to 1/2 stick margarine
- 1/2 c. chopped parsley or 2 T. parsley flakes
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/4 tsp. garlic powder
- 1/4 tsp. basil
- 1/4 tsp. oregano
- 2 beaten eggs
- 2 c. shredded mozzarella cheese 1
- pkg. crescent rolls
- 2 tsp. mustard
