Recipe for 2 pies Creamy classic rice pie

  • For crust::
  • 3 lobs ricotta
  • 1 cup sugar
  • 1 cup cooked rice (cooked in milk)
  • (add rice to milk, bring to a boil then lower and simmer. 1 cup rice to 1/2 gallon milk simmered slowly, stir often. Tip-cook rice ahead of time and let cool.
  • 3 eggs
  • 1 tsp vanilla
  • 1/2 to 3/4 cup heavy cream
  • Mix everything together-set aside
  • 2 1/2 cup flour
  • 3/4 cup Crisco
  • 2 tsp baking powder
  • 3/4 cup sugar
  • 1 tsp vanilla

  • Filling:: 3 cups Ricotta
  • 1/4 cup flour
  • 1 cup sugar
  • 2 tablespoons lemon & orange rinds (I don’t measure out 2 tblspns, I use about 3/4 of an orange rind and all of the lemon rind. I use a small hole cheese grater and grate the rind right into the mix.

  • For crust:: There was no separate recipe for this crust so I use Grandma Mad’s rice pie crust recipe which seems to be the one she used for this pie.
