SUN BREWED CHERRY ICED TEA

In a large covered jar, combine tea bags, mashed cherries, water and mint
- 8-10 Tea bags
- 2 cups fresh bing cherries, mashed
- 1 gallon cold water
- 4 sprigs of mint
BAKED CHEESE TRIO

Kit for instant hot appetizer
- 1 round of Brie or Camembert cheese, about 5" diameter (still in its wrapper)
- 1 C. coarsely chopped dried fruit (apricots, cranberries, whole sultana raisins, and currants)
- 3/4 C. coarsely chopped nuts (walnuts, pecans, shelled unsalted pumpkin or sunflower seeds)
- 3 round tins of descending size
CAKE - LADYFINGER WITH MIXED BERRIES AND WHIPPED CREAM

Make one day ahead for best flavors
- 6 T. cornstarch
- 3 C. milk
- 3/4 C. granulated sugar
- 1/2 tsp. almond extract
- 6 egg yolks, beaten
- 3 dozen ladyfingers, split and allowed to dry for several hours
- 1/2 C. fresh raspberries
- 4 T. strawberry jam
- 1 C. fresh blueberries
- 4 T. blackberry jam
- 2 C. heavy cream, whipped until stiff, flavored with 1 tsp. almond paste
- additional berries for garnish
Spiked Olives

Mix olives, oil, garlic and red pepper flakes in medium bowl
- 1 1/2 cups mixed good-quality olives, Grained
- 3 tbsp extra-virgin olive oil
- 1 clove garlic, peeled
- 1/2 tsp red pepper flakes
- 1 lemon
- Freshly ground pepper
Rustic Apple Tarts with Apple Cider Reduction and Creme Fraiche

Combine the first seven ingredients in a large, heavy, flat-bottomed pot and bring to a boil
- Special equipment needed: 3 1/2-inch
- tart rings or tart pans.
- 2 1/2 cups Muscat
- 1 1/4 cups water
- 2 1/3 cups sugar
- 1 to 2 vanilla beans, split and cracked
- 5 to 6 cardamom seeds, cracked
- 10 whole black peppercorns
- 2 to 3 cinnamon sticks
- 8 golden delicious apples
- 1 14-ounce package frozen puff pastry
FRISEE AND APPLE SALAD WITH DRIED CHERRIES AND WALNUTS

Whisk first 4 ingredients in small bowl to blend
- 3 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 2 tablespoons minced shallot
- 1 tablespoon honey
- 1/2 cup (generous) dried tart cherries (one 3-ounce package)
- 1 large head of frisée, torn into bite-size pieces (about 6 cups)
- 1 medium Gala apple, cored, thinly sliced
- 1/2 cup coarsely chopped toasted walnuts
POACHED EGGS - WHITE BEAN HUEVOS RANCHEROS

- 7 T. extra virgin olive oil
- 1 large garlic clove, very finely chopped
- 1 large onion, finely chopped
- 3 large tomatoes, cored and coarsely chopped
- 1/2 canned chipotle chile in adobo, minced (about 1 tsp.), plus 1 tsp. adobo sauce from can
- 1 T. freshly squeezed lime juice
- 2 T. very finely chopped cilantro
- Salt and freshly ground pepper to taste
- 4 oz. thickly sliced ham, coarsely chopped
- 2 15 oz. cans white beans, drained
- 1/2 C. water
- 12 corn tortillas, warmed
- 12 large eggs
- 1/2 C. crumbled queso fresco
- Sour cream for serving
