BISCUITS - SAFFRON

1. Preheat the oven to 350 degrees and line baking sheets with parchment paper
- Option:
- 4 oz. butter, melted
- 4 oz. sugar
- 1 egg, well beaten
- 6 oz. all purpose flour
- Pinch salt
- 1 tsp. baking powder
- 1/4 tsp. saffron
- Drop sugar by 3/4 and replace with cheese and peppercorns
FARFALLE - ZUCCHINI WITH RICOTTA, MINT, AND BASIL

1. Cut the courgettes into 4mm slices
- 8 medium-sized courgettes (zucchini)
- Olive oil for frying
- 375 g ricotta, fresh if possible
- 40 g pecorino, shaved
- 30 g basil
- 15 g mint
- Juice of 1 lemon
- Extra-virgin olive oil for drizzling
- Salt and freshly ground black pepper
- 100 g pasta shapes, such as shells
- or farfalle
SAVORY PARMESAN SHORTBREAD ROUNDS

Preheat oven to 350°F. Line baking sheet with parchment paper
- 1 3/4 cups all purpose flour
- 3/4 cup plus 2 tablespoons grated Parmesan cheese (about 2 1/2 ounces)
- 1 teaspoon coarse kosher salt
- 1/2 small garlic clove, minced
- Pinch of cayenne pepper
- 1 cup (2 sticks) chilled unsalted butter, cut into 1/2 inch cubes
SOUFFLE - SPINACH RICOTTA

- 1/2 C. chopped onion
- 1/4 C. safflower oil
- 1 C. chopped spinach leaves
- 2 C. part-skim ricotta cheese
- 1/2 tsp. dried dill weed
- 2 eggs, separated
- 1/2 C. grated Parmesan cheese
- 2 egg whites
Alaskan Halibut with Sweet Corn, Bacon Fresh Chickpeas and Cherry Tomatoes

Season halibut with lemon zest, 1 tablespoon thyme and 2 tablespoons parsley
- 6 5- to 6-ounce Alaskan halibut filets
- 1 lemon, zested
- 1 tablespoon plus 2 teaspoons fresh thyme leaves
- 3 tablespoons chopped parsley
- 1 5-ounce slab applewood-smoked bacon
- 4 tablespoons unsalted butter
- 1/2 cup sliced spring onions
- salt and freshly ground black pepper
- 2 cups fresh corn (about 3 ears)
- 9 small cipollini onions, peeled and
- cut into wedges
- 1 cup small cherry tomatoes, stemmed
- and halved
- 3/4 cup fresh chickpeas
- 1 teaspoon sherry vinegar, or to taste
- 2 tablespoons extra-virgin olive oil
- 6 pieces Grilled Cornbread (recipe follows)
- 2 tablespoons mixed, shredded green and
- opal basil
- FOR GRILLED CORNBREAD
- 8 tablespoons (1 stick) plus 2 tablespoons unsalted butter
- 2 cups cornmeal
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/4 teaspoon baking soda
- 1 tablespoon kosher salt

- 2 tbsp (25 ml) peppermint extract
- 1/3 cup (75 ml) cocoa powder
- 2 tbsp (25 ml) granulated sugar

- 10 oz. can Hungry Jack Refrigerated Flaky Biscuits
