Lemon Cheesecake

Combine 7 Tbs. melted butter, 1 tsp
- 7 Tbs. melted butter
- 1 tsp. cinnamon
- 1 1/2 cups graham cracker crumbs
- 2 lemons well, slice thinly and remove
- 1/2 cup sugar
- 2 Tbs. light corn syrup
- 1/2 cup water
- 1 " piece of cinnamon stick
- 3 (8oz) packages cream cheese
- 4 eggs
- 1/2 tsp. Boyajian's Lemon Oil
- 2 Tbs. sifted flour
Cuba Libre Ceviche Martini

Cut tilapia into 1/2 inch cubes
- 1 pound 26/30 count shrimp
- 1 pound tilapia fillets
- 1 quart lime juice
- 1/2 fresh pineapple, diced
- 4 medium tomatoes, diced
- 1/2 red onion, diced
- 1/2 cup cilantro, chopped
- 1 medium jalapeno
- 1 cup pineapple juice
- 1 teaspoon chili powder
TART - KENTUCKY DERBY TARTLETTS

1. Preheat oven to 350°F
- 36 frozen mini phyllo shells
- 1/3 C. semisweet chocolate mini-morsels
- 1 C. finely chopped pecans,
- toasted
- 3/4 C. firmly packed light brown sugar
- 1 T. butter or margarine,
- softened
- 1/4 C. bourbon
- 1 large egg, lightly beaten
Brown Sauce

Put oil in saucepan and heat, then add remaining ingredients
- 1 tsp, cooking oil
- 3 1/2 tsp. hoisin sauce
- 2 tsp. vinegar
- 4 tsp.sugar
- 1/2 tsp. white pepper
- 11 tsp.soy sauce
- 2 tsp. tomato ketchup
- 1 tsp. garlic powder
- 1 tsp. ginger
- 3 tsp.cooking wine
- 6 .tsp. water
Lemon Pepper Green Beans

Cook and drain 1 lb or frozen whole green beans
- 1 lb or frozen whole green beans
- 1/4 cup slivered almonds
- 2 tbsp. butte
- 2 tsp. Lemon & Pepper Seasoning Salt.
MINT FLORENTINES

1. Preheat oven to 350°F
- 1/2 C. granulated sugar
- 1/2 C. whipping cream
- 1/4 C. all-purpose flour
- Pinch salt
- 1 tsp. peppermint extract (optional)
- 2 oz. bittersweet chocolate, melted
QUICHE - SMOKED TURKEY

Bake the unpricked pastry shell in a 450°F oven for 4-5 minutes or till it just begins to puff
- 1 unbaked 9-in pastry shell
- 1 1/4 C diced, cooked, smoked turkey
- breast about 6 oz
- 1/3 C chopped onion
- 1 T butter or margarine
- 1 to 1 1/2 C shredded Swiss Cheese
- (4-6 oz)
- 3 slightly beaten eggs
- 1 C half and half or light cream
- 1/2 tsp dry mustard
- 1/8 tsp salt
- Dash ground red pepper
Baked Swordfish with Dill Sauce

Swordfish: Pat fish dry with paper towels
- Dill Sauce:
- 4 (4-6oz each) swordfish steaks
- Salt
- White pepper
- 1 tsp. oil
- 1 tsp. lemon juice
- Dill Sauce (recipe follows)
- 1/2 cup sour cream
- 1/2 cup unflavored yogurt
- 2 tbsp. mayonnaise
- 2 tbsp. minced fresh dill or 3/4 tsp. dried dill
- 1 tsp Dijon mustard
- Dash of bottled hot pepper sauce
- Salt and pepper
TART - APPLE CIDER REDUCTION

1. Set aside 1 C. of the cider, to be used later to keep the syrup from overcooking
- 1 pint apple cider
- 1 pint light corn syrup
- 1 to 2 cinnamon sticks
- 1 T. Calvados
- 1 T. lemon juice
SAUCE - TOMATO AND HERB

SAUTE shallots in hot oil in a Dutch oven over medium-high heat 3 minutes or until tender
- 4 large shallots, finely chopped
- 1 T. olive oil
- 35 oz. can peeled whole plum
- tomatoes
- 6 oz. can tomato paste
- 1 T. Worcestershire sauce
- 1/2 C. chopped fresh basil*
- 1 T. chopped fresh or 1 tsp. dried oregano*
- 1/2 tsp. garlic salt
- 1/2 tsp. freshly ground pepper
- 1 bay leaf
- 2 tsp. sugar (optional)
