BANANA CAKE - THE MANOR BORN WITH COFFEE BUTTERCREAM

For the cake: 1. Preheat oven to 375 °F
- FOR THE CAKE:
- 8 T. unsalted butter, softened
- 2 1/4 C. cake flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1 1/3 C. sugar
- 1 C. mashed ripe bananas (from about 2 medium banana
- 2 eggs
- Scant 1/2 C. buttermilk
- 1 C. coarsely chopped shelled unsalted pecans
- FOR THE FROSTING:
- 1 C. sugar
- 2 tsp. instant espresso powder
- 6 egg yolks
- 1 lb. unsalted butter, cut into small piece and softened
Wilted Spinach Salad

- 6 cup torn fresh spinach
- 1 cup sliced fresh mushrooms
- 1/4 cup sliced green onion
- 3 slices bacon
- 2 tbsp. vinegar

Spicy Corn and Black Bean Salad
