- Sachet:
- 1 4-lb. chicken, split in 4 or 8 pieces, with bones in
- 4 T butter
- 2 medium onions, cut into 8 wedges each
- 25 button mushrooms, cleaned
- 2 T flour
- 1 1/2 cups white wine
- 2 1/2 cups chicken stock
- 1 1/2 cups heavy cream
- 1/4 bunch chives
- Salt and ground white pepper to taste
- 2 cloves garlic
- 5 peppercorns, crushed
- 3 sprigs thyme
- 1 bay leaf
- 3 stems each of parsley, Chervil, and
- tarragon, leaves reserved

- 1 1/4 C. chopped pitted Medjool dates
- 3/4 C. chopped candied orange peel
- 1/3 C. chopped dried Mission figs
- 10 oil-cured olives, pitted, chopped
- (about 3 T.)
- 2 T. Nocello (walnut liqueur) or Frangelico (hazelnut liqueur)
- 2 T. water
- 1 3/4 C. all purpose flour
- 2 tsp. baking powder
- 1 tsp. coarse kosher salt
- 1/2 tsp. ground nutmeg
- 1/2 tsp. ground cloves
- 1/4 tsp. ground cinnamon
- 1/2 C. plain whole-milk yogurt
- 2 T. olive oil
- 1 1/2 sticks unsalted butter, room temperature
- 3/4 C. sugar
- 3 large eggs
- 2 C. coarsely chopped walnuts
- 3/4 C. shelled unsalted natural pistachios
Chopped Salad with Tuna

Place vinegar in a large salad bowl
- 2 tablespoons white wine vinegar
- salt and pepper
- 1/4 cup olive oil
- 1 head romaine lettuce ( about 1 pound) chopped into 1 inch pieces
- 1 can (15.5oz) chickepeas, drained and rinsed
- 1 can (6oz) tuna in oil, drained and flaked
- 1/2 cup black olives (about 20) such as Kalamata, Gaeta or Nicoise, pitted and slivered
- 1/2 red onion, cut into 1/4 inch pieces
- 2 cups freshly curly parsley, coarsely chopped.
Boursin Baked Chicken

- 2 4 ounce packages of Boursin cheese, softened

CAPELLINI - SEAFOOD SUPREME

- 1/2 C. unsalted butter or margarine
- 3 shallots, minced
- 2 cloves garlic, minced
- 1 pint whipping cream
- 1/2 tsp. dried thyme, crumbled
- 1/4 tsp. dried oregano, crumbled
- 3/4 tsp. salt, about
- 1/2 tsp. paprika
- 1/4 tsp. ground red hot pepper
- 1/8 tsp. black pepper
- 1 T. Pernod or dash ground anise
- 3/4 lb. angel hair pasta
- 1 lb. cooked, shelled and deveined small or medium shrimp or lump crab meat, well picked over
POTATO CHIPS WITH CREME FRAICHED AND SALMON CAVIAR

- 8 oz. creme fraiche or sour cream
- 1 pkg. (5 oz.) salt-and-pepper potato chips
- (can substitute regular gourmet chips)
- 1 tbsp cracked pepper
- 1 jar (2 oz.) salmon caviar
BISCOTTI - CRANBERRY PISTACHIO

- Non-stick vegetable oil
- 1/4 C. mild olive oil
- 3/4 C. granulated sugar
- 2 tsp. vanilla extract
- 1/2 tsp. almond extract
- 2 large eggs
- 1-3/4 C. unbleached flour
- 1/4 tsp. fine sea salt
- 1 tsp. baking powder
- 1/2 C. dried cranberries
- 1-1/2 C. unsalted, shelled pistachios
WATERCRESS SALW WITH CHEVRE

- 1/3 cup red wine or sherry vinegar

- 8 ounces goat cheese, cut into 1/2 cubes
