STUFFED CORNISH HENS

Season outside and cavities of hens with salt and pepper
- STUFFING:
- 8 Cornish hens, washed, dried
- salt and pepper
- 1/4 pound walnuts
- 1/4 pound pistachios
- 1/4 pound almonds
- 1/4 pound hazelnuts
- 1/4 pound bacon, diced
- 1 pound Italian sausage
- 5 slices white bread
- 1 tablespoon thyme, chopped
- 2 tablespoons parsley, chopped
- 4 ounces butter
Oven-baked Risotto

1. Preheat oven to 425*. In an ovenproof saucepan or Dutch oven, heat oil over medium-high heat
- 1 T. olive oil
- 1/4 C. finely chopped onion
- 3/4 C. short-grain rice, such as arborio
- 1/4 C. dry white wine or water
- 1/2 C. chicken stock or reduced sodium canned broth
- Salt and pepper
- 1 T. butter
- 1/4 C. freshly grated Parmesan
- 2 T. chopped fresh flat-leaf parsley
BARS - GHIRARDELLI MARBLED CHEESECAKE

Chill in refrigerator for 3 hours
- Crust:
- 1 C. flour
- 1 C. pecans, finely chopped
- 1/2 C. butter, softened
- 1/2 C. brown sugar, firmly packed
- Batter:
- 24 oz. cream cheese, softened
- 3/4 C. sugar
- 1 tsp. vanilla extract
- 3 eggs
- 1/2 bar (2 oz.) 60% Cocoa Bittersweet Chocolate Baking Bar, melted

- 2/3 CUP SUGAR
- 1/3 CUP HONEY
- 1 TSP. VANILLA EXTRACT
- 1 TSP. ANISEEDS
- 1/2 TSP. GRATED ORANGE ZEST
- 1/2 TSP. GRATED LEMON ZEST
- 2 3/4 ABOUT 2 3/4 CUPS ALL PURPOSE FLOUR
- 1 TSP BAKING POWDER
- GENEROUS 1/4 TEASPOON SALT

- 2 1/4 C. flour, divided
- 1 C. melted butter
- 1/2 C. confectioners sugar
- 2 C. brown sugar
- 2 tsp. vanilla
- 4 eggs
- Juice of 1/2 lemon
- 1 tsp. baking powder
- 1 1/2 C. shredded coconut
Roasted Beet Salad

Wash beets thoroughly; trim ends
- 4 small beets
- 6 slices apple wood smoked bacon
- 1 (0.6oz) envelope Good Season Zesty Italian Dressing
- 1/2 cup vegetable oil
- 1/4 cup balsamic vinegar
- 3 tbsp. water
- 1 (5oz) container organic mixed baby greens
- 1 shallot, thinly sliced
- 1/4 pound Maytag Blue Cheese crumbled
- 1 cup Kowalski Praline Pecans

- 3 T. balsamic vinegar
- 2 T. fresh thyme leaves or 2 t. dried thyme leaves
- Salt and freshly ground black pepper to taste

- 1/4 cup + 2 tablespoons vinegar
- 1/8 teaspoon allspice
- 1/8 teaspoon ginger
- 1/8 teaspoon cinnamon
- Dash cloves
