Ingredients
- STUFFING:
- 8 Cornish hens, washed, dried
- salt and pepper
- 1/4 pound walnuts
- 1/4 pound pistachios
- 1/4 pound almonds
- 1/4 pound hazelnuts
- 1/4 pound bacon, diced
- 1 pound Italian sausage
- 5 slices white bread
- 1 tablespoon thyme, chopped
- 2 tablespoons parsley, chopped
- 4 ounces butter

Preparation
Step 1
Season outside and cavities of hens with
salt and pepper. Combine stuffing ingredients and season with salt and pepper. Place two to three spoonfuls of stuffing in each cavity. Truss hens and cook on a sheet pan at 375° for one hour.
