BONELESS PORK LOIN MEDALLIONS WITH PORK SAUSAGE, NEW POTATOES, WILD CHARD AND RED WINE SAUCE

Perugine sausage, made of pork seasoned with garlic, bay leaves and rosemary, is popular in the region of Nice
- Salt
- 16 pearl onions
- 8 small new potatoes, halved
- 1/2 lb. wild Swiss chard, trimmed, or small tender cultivated chard, stalks discarded.
- 5 T. butter
- 6 T. extra-virgin olive oil
- Freshly ground white muntok and black sarawak pepper
- 10 oz. fresh mild pork sausages (without fennel)
- 1 1/2 lb. boneless pork tenderloin, trimmed and sliced into 12 medallions
- 1/2 C. burgundy or pinot noir
- 1/2 C. demi-glace
- 4 fresh bay leaves
Almond Foam

In a small saucepan, bring the milk, almonds, and oil to a boil
- 2 c. whole milk
- 3/4 c. shelled fresh green almonds or toasted slivered almonds
- 3 T almond oil
- Salt and freshly ground white pepper
- 4 sprigs chervil, for garnish
- 4 purple basil leaves, for garnish
- 4 green basil leaves, for garnish
Yule Time Punch

- 2 quarts Dole Pineapple Juice
- 1 can (12 oz.) frozen Dole Pine-Orange Banana Juice concentrate, thawed
- 1 quart lemon-lime soda

WAFFLES - BUCKWHEAT WITH APPLE CIDER SYRUP

1. In 1 quart saucepan, heat milk just until bubbles form around edge of pan
- Mulled Cider Syrup:
- 1 1/2 C. milk
- 2 T. molasses
- 2 T. butter or margarine
- 1 package active dry yeast
- 1/2 C. warm water (105° to 115°f.)
- 1 large egg
- 1 C. unsifted all-purpose flour
- 1/2 C. unsifted buckwheat flour
- 1/2 tsp. salt
- 2 1/4 C. apple cider
- 1/4 C. firmly packed light-brown
- sugar ,
- 1/2 C. apple jelly
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground cloves
- 1/4 tsp. ground nutmeg
Carpaccio on Crostini with Arugula

1.Wrap each piece of beef in foil and chill in the freezer for 1to 2 hours, until about to freeze
- Crostini:
- 3 x 1/4 lb. (125 g) pieces of beef filet mignon
- 1/4 cup (50 ml) extra-virgin olive oil
- 1/4 cup (50 ml) lemon juice
- 1 bunch fresh arugula, washed and dried
- 18 to 24 crostini (recipe follows)
- Salt and freshly ground black pepper
- 18 to 24 shavings of Parmigiano Reggiano
- 1 to 2 baguettes

- 1 pound dried black beans
- 3 quarts water
- 2 bay leaves
- 1 cup extra virgin olive oil
- 2 large red bell peppers, seeded and chopped
- 2 shallots, chopped
- 2 onions, chopped
- 8 cloves garlic, chopped
- 1 tablespoon ground cumin
- 2 tablespoons dried oregano
- 2 tablespoons chopped fresh oregano leaves
- 1 1/2 tablespoons sugar
- 2 tablespoons salt
- 1 red onion, diced for garnish
- 8 ounces sour cream, for garnish (optional)

Bring a gallon of salted water to a boil in a large pot
- 2 oz. fava beans, shelled
- 12 small new potatoes, about 1 to 1 1/2 inches across
- 4 spring onions, white bulbs plus 1/2 inch of the greens
- 4 baby fennel bulbs, trimmed, halved lengthwise, and washed
- 8 baby turnips, peeled and trimmed
- 8 French breakfast radishes, trimmed
- 4 orange baby carrots, peeled and trimmed
- 4 yellow baby carrots, peeled and trimmed
- 4 red baby carrots, peeled and trimmed
- 4 oz. haricots verts, trimmed
- 4 oz. yellow wax beans, trimmed
- 8 purple pearl onions, peeled and trimmed
- 1/2 c. shelled English peas
- 1 1/2 oz. sugar snap peas
- 1 green zucchini, Scooped with a melon-ball cutter

Combine in a covered container: 1 bottle full bodied red wine
- 1 bottle full bodied red wine
- 1/4 cup Grand Marnier or Cointreau
- 2 Tbs. good brandy
- 1/4 cup orange juice
- 1-2 Tbs. sugar (or to taste)
- 6 thin orange slices cut in half
- 6 thin lemon slices cut in half
- 1/2 " peach cut in thin wedges
- 1 (10 oz.) bottle club soda and serve very cold

- 2 T. plain dry breadcrumbs

- 1 T. Parmesan cheese
- 1/2 tsp. salt
- 1/2 tsp. pepper
- SAUCE:
- 1/2 C. chopped onions
- 1 T. vegetable oil
- 1 15oz. can tomato sauce
- 1 14 1/2 oz. can whole tomatoes, undrained and crushed
- 1 6 oz. can tomato paste
- 1 1/2 tsp. basil
- 1 1/2 tsp. sugar
- 1/2 tsp. garlic powder
- 1/2 tsp. oregano
- 2 T. grated Parmesan cheese
- Hot cooked spaghetti
