Warm Pineapple Punch

Combine all ingredients in Dutch oven
- 3 quarts Dole Pineapple Juice
- 1 bottle red wine or 1 quart grape juice
- 2 cups Dole Pitted Dates
- 2 cups Dole Raisins
- 1 cup dried apricots
- 4 cinnamon sticks
- 1 teaspoon whole allspice
- 1 teaspoon whole cloves
PANCAKES - WITH DELICIOUS BLUEBERRY COMPOTE

1. To make the blueberry compote: combine the blueberries, sugar, lemon zest, and 2 T
- BLUEBERRY COMPOTE:
- 18 oz. fresh blueberries
- 1/4 C. sugar
- Grated zest and juice of 1 lemon
- 1/4 C. coarsely chopped fresh mint leaves (optional)
- HOTCAKES:
- 1 C. fresh ricotta cheese
- 4 large eggs, separated
- 3/4 C. buttermilk, shaken
- 1 C. all-purpose flour
- 1 1/2 tsp. baking powder
- Pinch of salt
- 1/4 C. sugar
- 1/2 C. fresh blueberries
- 3 T. unsalted butter
- Butter, for serving.
LASAGNE - SPINACH

1. Cook lasagne noodles according to package directions
- 1/2 lb. mozzarella cheese, grated
- 1/2 lb. Monterey Jack cheese, grated
- 8 oz. cooked lasagna noodles
- 2 packages frozen chopped spinach, thawed and squeezed dry
- 1 C. Parmesan cheese
- 1 qt. (or less) low-fat cottage cheese
- 2 eggs
- 3 T. melted butter
- 2 garlic cloves, crushed
- 1 package fresh mushrooms
- Seasonings (basil, oregano, pepper, etc.)
- Olive oil
Shrimp Rolls with Cilantro

For the filling: 1. Soak the noodles in boiling water for 20 to 30 minutes, until tender
- For the dipping sauce:
- 2 oz. (50 g) cellophane noodles
- 1 lb. (SOOg) shrimp, cooked, peeled,
- deveined and cut in half crosswise
- 1 cup (60 g) chopped cilantro
- 1/2 cup30 g) slivered fresh mint leaves
- 8 medium romaine lettuce leaves, washed,
- dried and shredded
- 1/4 cup (60 mL) lime juice
- l tbsp (15 mL) sesame oil
- 2 to 3 tsp (10 to 15 mL) grated fresh ginger
- Soy sauce or salt
- Freshly ground pepper
- 20 x 6" rice flour wrappers
- 1 to 2 small red chilies, finely minced, or 1 to
- 2 tsp (5 to 10 ml) dried chili flakes
- 1 tbsp (15 ml) white vinegar
- 1/2 cup (125 ml) bottled fish sauce (called nuoc mam, this is widely available in Asian supermarkets)
- 1/4 cup (50 mL) fresh lime juice
- 1 small carrot, finely shredded, rinsed and squeezed dry
- 2 cloves garlic, minced
- 1/2 cup sugar
Chocolate Espresson Drop Cookies

1. In a large bowl, using low speed of mixer, cream together butter and sugar
- 1/2 cup (125 ml.) unsalted butter, softened
- 3/4 cup (175 ml) granulated sugar
- 1/3 cup (75 ml) cocoa powder
- 2 tsp (10 ml) ground espresso beans
- 1-1/2 tsp (7 ml) vanilla extract
- 1/8 tsp (0.5 ml) salt
- 1 large egg
- 1 cup (250 ml) all-purpose flour
- 1/2 tsp (2 ml) baking soda
- 1/3 cup (75 ml) dark chocolate chips or chunks
- 1/3 cup (75 ml) coarsely chopped pecans
BARS - BUTTERFINGER

1. Preheat oven to 350°F
- 1 C. firm brown sugar
- 1/2 C. sugar
- 1 C. margarine
- 4 C. 3 minute oatmeal
- 1 C. chocolate chips
- 3/4 C. peanut butter
LEMONS IN OIL

- 2 to 3 large lemons scrubbed and sliced
- Salt, as required
- Paprika, as required

BROWNIES - BAKERS ONE BOWL

- 4 squares Baker's unsweetened chocolate
- 1 1/2 sticks butter
- 2 C. sugar
- 3 eggs
- 1 tsp. vanilla
- 1 C. all purpose flour
- 1 C. coarsely chopped nuts (optional)
ICE CREAM - CINNAMON SPICE

1. In medium bowl, whisk together egg yolks, sugar, cinnamon, nutmeg and cloves
- 14 beaten egg yolks
- 1 1/2 C. sugar
- 1 T. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1/4 tsp. ground cloves
- 4 C. half and half
- 3 C. whipping cream
- 2 tsp. vanilla
PIE - KEY LIME ICE CREAM

Ice cream maker - 2 hours Chill 4 hours
- 1 2/3 C. sugar, divided
- 1 2/3 C. heavy cream
- 1 C. whole milk
- 1/4 C. light corn syrup
- 1 vanilla bean, split in half lengthwise
- 1 1/4 C. graham cracker crumbs
- 5 T. unsalted butter, melted
- 1/4 C. sugar
- 1/4 tsp. ground cinnamon
- Pinch freshly grated nutmeg
- 8 large egg yolks
- 1 tsp. Key lime zest
- 1 1/4 C. Key lime juice
- Garnish with Key lime slices and whipped cream
