Warm Soft Chocolate Cake with Berries

In the top of a double boiler, heat the butter & chocolate until the chocolate is almost completely melted
- Warm, Soft Chocolate Cake
- 1/2C1/2 C butter, plus some for buttering the molds
- 4ounces4 ounces bittersweet chocolate, preferably Valrhona
- 22 eggs
- 22 egg yolks
- 1/4C1/4 C sugar
- 2t.2 t. flour, plus more for dusting
- In the top of a double boiler, heat the butter & chocolate until the chocolate is almost completely melted. Beat together the eggs, yolks & sugar with an electric beater until light & thick. (Use the kitchen aid – it should take about 10 minutes)
- Beat together the melted chocolate & butter; it should be quite warm. Pour in the egg mixture then beat in the flour, just until combined.
- Preheat the oven to 450 F. Bake the molds on a tray for 6-7 minutes. The center will still be quite soft, but the sides will be set. ( & start to pull away )
- by lifting up one corner of the mold; the cake will fall out onto the plate. Serve immediately.
- Serve with ice cream or crème anglaise. & warm fruit compote.
Stacey's Caesar Salad

First make your croutons
- Croutons:
- 2 heads of Romaine lettuce
- 1/2 can flat anchovies, chopped fine (you can use more if you like)
- 1 heaping tbsp of Hellman's REAL mayo (instead of a raw egg)
- juice from half of a lemon
- 1 tbsp balsamic vinegar (my secret ingredient!!!!)
- 1 small garlic clove, minced
- 1/3 cup of good mild flavored olive oil
- freshly ground black pepper
- Parmigiano Reggiano curls for the top
- Italian bread, cubed
- olive oil and garlic powder (yes, I said garlic POWDER)
Mojo Sauce

Toss the cilantro, garlic, and jalapenos in a medium bowl with 1/2 t of the salt & 2 T of the oil
- 2 bunches cilantro, stems removed
- 1 large clove garlic, coarsely chopped
- 2 jalapeno chiles, coarsely chopped
- 1 1/2 t salt
- 2 T plus 3/4 C olive oil
- 2 T cumin seed, toasted & ground
- Juice of 1 lime
Creamy Meyer Lemon Vinaigrette Recipe

1. Combine all ingredients in medium bowl
- 2 Tablespoons Meyer lemon juice from about 1 large meyer lemon
- 2 Tablespoon olive oil
- 1/4 about 1/4 teaspoon salt, or to personal taste
- 1 teaspoon balsamic vinegar
- 1 teaspoon mayo
- 1/2 teaspoon sugar
- 1 clove garlic, crushed
- lettuce leaves
- walnuts, almonds or pecans (optional)
Mango Chutney

Sterlize jars & lids Combine ingredients in pot Boil, stirring occasionally Simmer 2 1/2 hours until thick Stir
- 12 C mango coarsely chopped
- 2 large onions peeled & chopped
- 2 C raisins
- 1 C fresh ginger diced
- 2 1/2 C sugar
- 2 C brown sugar
- 3 C vinegar
- 1 1/2 t whole allspice
- 1 1/2 t whole cloves
- 2 (2" piece) cinnamon
- 2 t salt
- 1 t peppercorns

Sprinkle your eggplant generously with salt and let it drain in a colander for 30 minutes
- 1 large (mine was just over 1 1/4 pounds/570 grams) eggplant, cut into 3/4-inch dice
- Salt and black pepper
- 1/4 cup (60 ml) olive oil
- 1 medium carrot, peeled and cut into 1/4-inch dice
- 1 celery stalk, in a 1/4-inch dice
- 1 medium onion, finely diced
- 3 garlic cloves, minced
- 8 ounces (225 grams) orzo, a rice-shaped pasta, rinsed
- 1 teaspoon (6 grams) tomato paste
- 1 1/2 cups (355 ml) vegetable stock
- 1 to 3 tablespoons fresh oregano, chopped
- 1 teaspoon grated lemon zest or more to taste, up to the zest of a whole lemon
- 4 ounces (115 grams) mozzarella, firmer is better here, cut into 1/3-inch dice
- 1 1/2 ounces (a generous 1/2 cup or 45 grams) parmesan, grated
- 3 medium tomatoes, diced

Preparation 1. Place parsley, capers, garlic, orange zest, lemon zest and olives in small mixing bowl
- 1 cup chopped flat-leaf parsley
- 2 tablespoons capers, rinsed and roughly chopped
- 1 or 2 garlic cloves, very finely chopped
- 1/2 teaspoon grated orange zest
- 1/2 teaspoon grated lemon zest
- 1/2 cup coarsely chopped olives, preferably a mixture of black and green
