Chocolate Chip Cookies

Mom's Recipe
- 2 1/4 C Flour
- 1 t Baking Soda
- 1 t Salt
- 1 C Butter
- 3/4 C Sugar
- 3/4 C Brown Sugar
- 1 t Vanilla
- 2 Eggs
- 2 C Chocolate Chips
Roasted Almonds

Preheat oven to 350 degrees
- 3 tablespoons butter
- 2 teaspoons dried rosemary, crushed
- teaspoon salt
- teaspoon cayenne pepper
- 2 cups raw almonds
Spicy Sushi Mayo, Great with Crab Cakes

spicy mayo recipe – it’s traditionally served with sushi, but it goes great with our Maine jumbo crab cakes!
- 3 Tablespoons mayo
- 1 Tablespoons Sriracha chili sauce
- 1 teaspoon lemon/lime juice
- 1/4 teaspoon soy sauce (optional)
- Preparation
Warm Chocolate Cake

In the top of a double boiler, heat the butter & chocolate until the chocolate is almost completely melted
- Warm, Soft Chocolate Cake
- 1/2 1/2 1/2 C butter, plus some for buttering the molds
- 4 4 4 ounces bittersweet chocolate, preferably Valrhona
- 2 2 2 eggs
- 2 2 2 egg yolks
- 1/4 1/4 1/4 C sugar
- 2 2 2 t. flour, plus more for dusting
- 10 the top of a double boiler, heat the butter & chocolate until the chocolate is almost completely melted. Beat together the eggs, yolks & sugar with an electric beater until light & thick. (Use the kitchen aid – it should take about 10 minutes)
- Beat together the melted chocolate & butter; it should be quite warm. Pour in the egg mixture then beat in the flour, just until combined.
- to 450 6-7 to 450 F. Bake the molds on a tray for 6-7 minutes. The center will still be quite soft, but the sides will be set. ( & start to pull away )
- 10 each mold onto a plate and let sit for about 10 seconds. Unmold by lifting up one corner of the mold; the cake will fall out onto the plate. Serve immediately.
- Serve with ice cream or crème anglaise. & warm fruit compote.
- Warm fruit Compote
- 1/2 1/2 1/2 C sugar
- 3 3 3 T butter
- 2 2 2 Cups fresh berries
Orange, Tomato & Avocado Salad

1. Whisk together the lemon juice and extra-virgin olive oil
- 2 teaspoons fresh lemon juice
- • 4 teaspoons extra-virgin olive oil
- • 2 avocados, large dice
- • 2 tomatoes, preferably heirloom, cut into large dice
- • 2 oranges, peeled and sliced into thick rounds (I used clementines)
- • 1 small red onion, sliced into rings
- • 10 to 12 black olives, pitted
- • 1/4 cup sliced almonds, toasted
- • salt and freshly ground pepper to taste
Apple pie

combine and refrigerate Pulse in cuisinart until combined, and refrigerate
- 2 lbs tart apples, cored, peeled, and sliced.
- 1 T lemon juice, throw this on the apples as soon as they're cut.
- 2 T flour
- 3/4 c sugar
- 1 t cinnamon
- dash of salt
- Topping
- 2/3 c flour
- 1/3 c brown sugar
- 1/3 c butter
Roast Turkey with Sage

For Butter: Cook bacon in heavy large skillet over medium heat until brown and crisp
- Turkey and Gravy:
- 1 16-pound turkey
- 3 cups chopped leeks (white and pale green parts only; about 2 medium)Butter
- 8 slices bacon (about 1/2 pound)
- 1 cup (2 sticks) unsalted butter, room temperature
- 3 tablespoons chopped fresh sage or 3 teaspoons dried
- 8 large fresh sage sprigs
- 3 bay leaves, crumbled
- 4 1/2 cups (about) canned low-salt chicken broth
- Fresh sage and parsley sprigs
Banana Bread

Preheat oven to 350°F. Butter 2 (9- by 5- by 3-inch) metal loaf pans, then dust with flour, knocking out excess
- 3 1/4 cups all-purpose flour
- 2 teaspoons baking soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 4 large eggs at room temperature for 30 minutes
- 2 1/3 cups sugar
- 1 cup vegetable oil
- 3 cups coarsely mashed very ripe bananas (6 large)
- 1/4 cup crème fraîche
- 2 teaspoons vanilla
- 1 1/3 cups walnuts (4 ounces), toasted and chopped
Aunt Polly's No Cook Pickles

Susan's Aunt Polly
- 1/2 gallon pickles
- 1 C pickle canning salt
- 2 T alum
- apple cider vinegar
- 2 T all spice (whole)
- 1/2 t tumeric
- 3 C sugar
- 2 C sugar
- 2 C sugar
TOPPING FOR APPLE CRISP
