Honey Cashew Chicken

- 1 cup instant rice
- 2 (6-ounce) skinless, boneless chicken breast halves, cut into 1-inch cubes
- 2 tablespoons cornstarch
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon canola oil
- 1 tablespoon dark sesame oil
- 2 cups broccoli florets
- 1 cup frozen shelled edamame (green soybeans)
- 2 garlic cloves, minced
- 1 medium yellow onion, finely chopped
- 1 red bell pepper, sliced
- 1/2 cup dry-roasted cashews, unsalted
- 1 tablespoon rice vinegar
- 3 tablespoons honey
- 2 tablespoons lower-sodium soy sauce
- 1 tablespoon Sriracha (hot chile sauce, such as Huy Fong)
Sparkling Meyer Lemon Cocktail

Combine first 3 ingredients in a microwave safe liquid measuring cup
- 1 cup water
- 1/3 cup sugar
- 1 rosemary sprig
- 1 cup fresh meyer lemon juice, chilled, about 8 lemons
- 1/3 cup chilled vodka
- 2 cups chilled prosecco or other sparkling wine, chilled
Chicken BLT Salad-Cooking Light

- 1 c fat-free buttermilk, divided
- 1 large egg white, lightly beaten
- 3/4 c panko
- 4 skinless, boneless chicken breast, halves
- 3 Tb canola oil
- 1/3 c canola mayo
- 1 Tb chopped fresh dill
- 1 Tb chopped fresh chives
- 2 tsp white vinegar
- 1 tsp minced garlic
- 1 medium head iceberg lettuce, cored and cut into 6 wedges
- 2 c plum tomatoes
- 2 oz crumbled blue cheese
- 3 slices bacon, cooked and crumbled

Preheat oven to 350. Cover baking sheets with parchment paper
- 1 box brownie mix
- 3 Tb water
- 3 Tb oil
- 1 egg
- 1/4 tsp cinnamon
Garden-Style Ravioli

1. Cook ravioli according to package directions, except omit any oil or salt
- 9 oz ravioli, light cheese-filled
- 1 TB olive oil
- 1 medium chopped red bell pepper
- 1 medium chopped green bell pepper
- 1 medium carrot cut into long strips
- 1 small chopped onion
- 2 minced cloves of garlic
- 1 medium chopped tomato
- 1/4 C chicken broth
- 1 TB fresh tarragon or basil or 1 tsp dried tarragon or basil
- Crushed pepper

- 1 recipe Chocolate Filling
- 1 1/4 cups all-purpose flour
- 1/2 cup ground pistachio nuts
- 1/4 cup granulated sugar
- 1/4 cup packed brown sugar
- 1/2 cup butter
- 5 ounces semisweet chocolate, chopped
- 1 tablespoon shortening
- Finely chopped pistachio nuts (optional)
- Powdered sugar (optional)
- 15 oz ricotta
- 3/4 c sifted powdered sugar
- 1 tsp vanilla
- 2 oz chopped semisweet chocolate
- 3 Tb chopped pistachio
