1. Heat oil in a pan and brown chicken on all sides
- 2 boneless chicken breasts
- 1 T olive oil
- 1 clove garlic
- 1 onion, chopped
- 1/4 cup sun-dried tomatoes, chopped
- 1/8 t red pepper flakes
- 1/4 cup dry white wine
- 3/4 cup chicken broth
- 2 cups mushrooms
- 1/4 cup heavy cream
- 1/4 cup fresh basil, chopped
Chicken Pot pie with Cornbread Crust

To make filling: 1. Preheat oven to 400 degrees
- Filling:
- 1 T olive oil
- 1 T butter
- 1 onion, chopped
- 1/4 cup flour
- 2 cups chicken stock
- 2 cups rotisserie chicken
- 1 cup frozen mixed veggies (peas, carrots, corn)
- salt and pepper to taste
- dash Tabasco sauce
- Crust:
- 3/4 cup cornmeal
- 3/4 cup flour
- 1 T baking powder
- 1 1/2 T sugar

- 1/2 cup fresh lime juice
- 1/4 cup fresh orange juice
- 1/4 cup Tequila
- 1 T chili powder
- 1 Jalapeno, seeded and minced
- 1 clove garlic
- salt and pepper to taste
