Spinach Lasagna

1. Preheat oven to 350 degrees F 2
- 10 whole wheat lasagna noodles
- 2 T olive oil
- 1 cup chopped fresh mushrooms
- 1 cup chopped onion
- 1 T minced garlic
- 2 cups fresh spinach
- 2 cups ricotta cheese
- 1/2 cup grated Romano cheese
- 1 t salt
- 1 t dried oregano
- 1 t dried basil leaves
- 1/2 t ground black pepper
- 1 egg
- 2 cups shredded mozzarella cheese
- 2 cups tomato pasta sauce
- 1 cup grated Parmesan cheese

1. Melt butter and flour slowly together
- 3/4 - 1 pound whole wheat pasta
- 2 T butter
- 1/4 cup flour
- 2 1/4 cup skim milk
- 1 1/2 2% sharp cheddar cheese
- 1 T paprika
- 1 T cayenne pepper
- 2 T dry mustard
Quick Black beans and Rice

1. In large saucepan, heat oil over medium-high
- 1 T canola oil
- 1 onion, chopped
- 1 (15 ounce) can black beans, undrained
- 1 (14.5 ounce) can stewed tomatoes
- 1 t dried oregano and basil
- 1/2 teaspoon garlic
- 1 1/2 cups uncooked instant brown rice

1. Season chicken with salt and pepper
- 1 1/2 pounds boneless, skinless chicken breasts, thinly sliced
- Coarse salt and ground pepper
- 2 T olive oil
- 1 large onion, thinly sliced
- 1 large red bell pepper, thinly sliced
- 3 cloves garlic, minced
- 1 1/2 t grated peeled fresh ginger
- 1/4 to 1/2 teaspoon red-pepper flakes
- 3 T soy sauce
- 3 T rice vinegar
- 1 1/2 t cornstarch, mixed with 1 T water
- 12 to 16 Boston lettuce leaves

- 1 pound ground sirloin
- 1/2 pound ground Italian sausage
- 2 medium onions, finely chopped
- 4 garlic cloves
- 2 cans (15 oz.) diced tomatoes, undrained
- 2 cans (6 oz.) tomato paste
- 1 cup red wine
- 1/4 cup sugar
- 1/4 cup Worcestershire sauce
- 1 T canola oil
- 1/4 cup fresh parsley
- 2 T fresh basil
- 1 T oregano
- 2 bay leaves
- 1/2 t salt
- 1/2 t marjoram
- 1/2 t pepper
