Deep Fat Fried Pheasant

Combine ingredients for your choice of coating mix
- COATING MIX 1:
- 1 young pheasant cut in pieces
- 1/4 cup coating mixture (listed below)
- Milk or buttermilk
- Cooking fat
- 1/4 cup flour
- 1 teaspoon paprika
- 1/4 teaspoon salt
- 1/8 teaspoon freshly-ground black pepper
- COATING MIX 2:
- 1/4 cup pancake mix
- 1/4 teaspoon salt
- COATING MIX 3:
- 1/4 cup flour
- 1/4 teaspoon salt
- 1/4 teaspoon freshly-ground black pepper
- 1/8 teaspoon oregano
- 1/8 teaspoon basil
- COATING MIX 4:
- 1 egg beaten slightly
- 1/2 cup milk
- 1/2 cupflour
- 1/2 teaspoon Worcestershire sauce - (to 1)
- 1/8 teaspoon allspice
- 1/4 teaspoon salt
- 1/8 teaspoon freshly-ground black pepper

- 1 tablespoon butter
- 1 tablespoon canola oil
- 2 stalks celery, cut up
- 1 medium onion, diced
- 1 medium green bell pepper, diced
- 1 teaspoon minced garlic
- 4 to 5 cups bite-size pieces of cooked chicken
- 2 cans condensed cream of chicken soup
- 1 15-ounce can sliced carrots, drained
- 2 cans, 10 ounces each tomatoes with green chiles (e.g. Rotel)
- 1 teaspoon each dried oregano, cumin, chili powder
- 1 12-ounce bag grated Cheddar cheese
- 12 corn tortillas, 6-inch diameter, cut into 1/2-inch fingers

- 1 1/4 cup grated manchego cheese
- 1 Tablespoon flour

- 1/4 CUP CANOLA OIL
- 1/2 CUP WHITE FLOUR

- 1 TBSP CHICKEN BASE
- 1 QT 1/2 & 1/2
- 1/2 CUP WATER
- 1/8 TSP GROUND CUMIN
- 1 TBSP GRANULATED GARLIC
- 1 TSP OREGANO LEAF
- 1 TSP (SEA) SALT
- 1 LB COOKED, SHREDDED, WHITE AND DARK CHICKEN MEAT
- 1 JAR EL PINTO 16 OZ ROASTED GREEN CHILE
- 1/2 " DICED, COOKED RED POTATOES
Braised Pheasant with Gin and Juniper Sauce

Pheasant dries out very easily when it is cooked
- 1 pheasant (2 to 3 pounds)
- Salt and freshly ground black pepper to taste
- 8 slices of bacon
- 1/4 cup vegetable oil
- 1/2 cup shallots
- 1/2 teaspoon crushed juniper berries
- 2 bay leaves
- 2/3 cup gin
- 1/4 cup dry sherry
- 1 cup @32036
- 3 tablespoons minced fresh parsley
- 2 tablespoons butter
