Down Home Crock Pot Chili

Brown ground round. Drain off fat
- 2 pounds ground round
- 2 cups chopped onion
- 2 crushed garlic cloves
- 2 tablespoons chili powder
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon oregano
- 1 teaspoon ground cumin
- 1/2 teaspoon cayenne pepper
- 1/2 cup beef stock (can be made with bouillon cubes)
- 1 (28 oz.) can un-drained tomatoes, mashed
- 3 cans drained kidney beans
- 1 package chili seasoning mix

- 4 ripe peaches (or apricots or plums), pitted, then diced into 1/4-inch cubes or sliced into very thin wedges

- 4 tablespoons red bell pepper (for color), finely chopped
- 1 jalapeño chili, seeds and membranes removed, minced, or your favorite chili salt and freshly ground black pepper to taste
El Pinto's Green Chile Chicken Tortilla Soup

In a large saucepan over medium heat saute onions & garlic in olive oil until soft
- 1 large onion, diced
- 5 garlic cloves, minced
- Two turns around the pan of olive oil
- 1 rotisserie chicken worth of chicken (approximately 5 cups), taken off the bone and skinned and pulled apart or diced into bite size pieces
- 2 - 16oz jars of green chile sauce/salsa (NOT Enchilada sauce - I used El Pinto
- 1 can black beans, drained and rinsed
- 1 Cup frozen corn kernels
- 3 cups chicken stock
- 1 tsp. cumin
- 1 tsp. ground black pepper
- 2-3 Tbsp fajita or taco seasoning (depending on your taste)
