Fish - Baked Shrimp Scampi

Preheat oven to 425 degrees
- 2 pounds shrimp, peeled and deveined, (optional: tails removed)
- 3 tablespoons olive oil
- 2 tablespoons white wine
- Kosher salt and freshly ground black pepper, to taste
- 12 tablespoons (1 1/2 sticks) unsalted butter, softened
- 4 teaspoons minced garlic (4 cloves)
- 1/4 cup minced shallots or 4 green onions, white parts only
- 3 tablespoons minced fresh flat-leaf parsley
- 1 teaspoon minced fresh rosemary
- 1/2 teaspoon red pepper flakes
- 1 teaspoon grated lemon zest
- 2 tablespoons freshly squeezed lemon juice
- 1 extra-large egg yolk
- 2/3 cup panko breadcrumbs (or regular breadcrumbs)
Drinks - Italian Lomoncello Cocktail

In a pint glass, add a few ice cubes, lemon pieces, basil, grappa and limoncello and muddle
- Ice
- 1/2 lemon, cut in small pieces with the rind
- 1 sprig fresh basil, plus extra for garnish
- 1-ounce grappa
- 2 ounces limoncello
- 1 1/2 ounces simple syrup (equal amounts sugar and water heated until sugar dissolves; cool)
- Splash club soda
Salad Dressing - Potato Salad Dressing

Mix altogether well. Into this, slice thin cooked potatoes which have been cooked to not quite done and cooled
- 2 8 oz sour cream w/ chives
- 1 cup mayonnaise
- 1/2 cup lemon juice
- 3 t salt
- 1/2 t pepper
- 2 t celery seed
- 3 to 5 lbs potatoes
- 6 hard cooked eggs
Dessert - Biscotti - Pascento

Cream sugar and butter together – adding one egg at a time and whip after each egg
- 1 stick of butter – room temperature (1/2 cup)
- 3 eggs – room temperature
- 3/4 cup sugar
- 2 cups of flour
- 2 t. baking powder – heaping
- 3 to 5 t of Anise flavor or 1/4 t. of oil (we use the oil)
Salad - Ceasar

Preheat the oven to 300 degrees
- 1 Loaf French or Italian bread
- 1/2 Cup butter, melted
- 1/2 Teaspoon garlic power
- 1/4 Cup fresh-grated Parmesan cheese
- 1/3 tube of anchovy paste
- Juice of 1/2 large lemon
- 3 Heaping tablespoons fresh grated Parmesan cheese
- 2 Dashes Worcestershire sauce
- 1/2 Cup olive oil, cool
- 1/4 Teaspoon dry mustard
- 1/2 Teaspoon freshly ground black pepper
- 1 Egg
- 4 Large garlic cloves, peeled and chopped
- 12 To 24 whole romaine lettuce leaves, cleaned and dried
Vegetable - Carrots

Sauté garlic in butter and olive oil with lid on
- 3 to 4 carrots – cook until almost done
- Add 3 T sugar (stir it up)
- Add 4T Sherry
Pasta - Shrimp, Spinach and Mushrooms

Vegetable - Brussel Sprouts

Steam in microwave about 13 minutes Drain and add marinade Whisk and pour over sprouts
- 1/2 pound of Brussel Sprount
- Marinade –
- 1/3 cup oil
- 4 to 5 diced cloves of garlic
- Juice of whole lemon
- 1 T of dill
- Pepper
Salad Dressing - Yellow Dope Nana

Let vinegar and butter come to a boil
- 3/4 cup cider vinegar
- 1 t butter
- 1/3 cup sugar
- 1/3 t salt
- 4 egg yolks, beaten
- 1 t mustard (dry) made to paste w/ 1
- T cold water
Holiday - Drunking Cranberry’s

Mix brandy and sugar together and try to dissolve the sugar
- 4 cups of berries washed and drained
- 1/2 cup brandy
- 1 cup sugar
- or
- 3 lb of berries
- 1 1/2 cup brandy
- 3 cups of sugar
