Beef - Company Pot Roast

Barefoot Contessa
- 1 (4 to 5-pound) prime boneless beef chuck roast, tied
- Kosher salt and freshly ground black pepper
- All-purpose flour
- Good olive oil
- 2 cups chopped carrots (4 carrots)
- 2 cups chopped yellow onions (2 onions)
- 2 cups chopped celery (4 stalks)
- 2 cups chopped leeks, white and light green parts (2 to 4 leeks)
- 5 large garlic cloves, peeled and crushed
- 2 cups good red wine, such as Burgundy
- 2 tablespoons Cognac or brandy
- 1 (28-ounce) can whole plum tomatoes in puree
- 1 cup chicken stock, preferably homemade
- 1 chicken bouillon cube
- 3 branches fresh thyme
- 2 branches fresh rosemary
- 1 tablespoon unsalted butter, at room temperature
Dessert - Scotch Shortbread

Sift flour; measure; and sift again
- 1 1/2 cups flour
- 2/3 cups butter (10 2/3 T)
- 1/2 cup powered sugar
Dessert - Butter Frosting

Mix and spread on cake
- 1/2 cup butter
- 1 lb. powdered sugar
- 4 to 5 T milk
- 1 1/2 t vanilla
Salad Dressing - Blue Cheese

1. Place all the ingredients except the salt in the bowl of a food processor, adding the cheese last
- 2/3 cup sour cream
- 1/2 cup mayonnaise
- 1/4 cup buttermilk, plus more if necessary
- Juice of 1/2 lemon
- 1 clove garlic, minced
- 3 ounces blue cheese, crumbled
- Kosher or sea salt
Breakfast - Pancakes

Mix egg, milk, flour together then add the rest of the ingredients and mix
- 1 egg
- 1 cup milk
- 1 cup flour
- 1 t vanilla
- 1 T Baking Power
- 1 T sugar
- 1 T oil
Dessert - Cream Cheese Frosting

- 1 cube butter (softened)
- 1 1/2 cup powdered sugar
- 1 t vanilla
- 1 8oz package cream cheese
- 1 cup chopped walnuts
Vegetable - Harvard Beets

Drain contents of 2 16 oz cans of diced beets - reserve liquid
- 1/3 cup sugar
- 3 t cornstarch
- 1/4 cup beet liquid
- 1/4 cup orange juice concentrate or vinegar
- 1 T butter
Vegetable - Brussels Sprouts - Pan- Browned

Combine sherry and currants in small bowl and set aside to soak for at least 20 minutes
- 2 tablespoons currants
- 2 tablespoons sherry
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 garlic clove, thinly sliced
- 2 tablespoons pine nuts
- 1/2 pound Brussels sprouts, trimmed and halved lengthwise
- Salt and pepper, to taste

Turn on oven to 500 degrees to heat, then turn down to 375 degrees and cook for one hour

- 1 cup graham crackers
- 1 cup sour cream
