- 10 oz. brussels sprouts
- Salt
- Fresh ground black pepper
- 1 tablespoon unsalted butter
- 1 tablespoon olive oil
- 1 small red onion, thin sliced lengthwise
- 2 tablespoons balsamic vinegar
Chicken - Paillards with Lemon-Butter Sauce

- 4 chicken paillards (from 2 breast halves)
- Salt and pepper
- 1 T extra-virgin olive oil
- 1 T plus 2 to 3T unsalted butter
- 1/4 cup minced or sliced shallot
- Segments and juice of 2 lemons
- 3/4 cup low-sodium chicken stock

- 2 bunches broccoli rabe (rapini) or spinach, thick ends removed
- 8 links turkey sausage
- 1/4 cup olive oil
- 5 garlic clo9ves, thinly sliced
- Black pepper
- 1 teaspoon crushed red pepper
- 1-pound thin linguine
- Freshly grated Parmesan cheese
Soup - Spinach Soup -Goldilocks’ Gourmet

Melt the butter in a large saucepan
- 5 T unsalted butter
- 1/4 p9ound fresh mushrooms, washed, dried, trimmed, and dices
- 1 scallion, shopped
- 5 T all-purpose flour
- 2 cups chicken broth
- 2 cups milk
- 1/2 t sale (optional)
- Black pepper (preferably freshly ground)
- Ground nutmeg (optional)
- 1/4 pound cream cheese, softened and cut into cubes
- 1 cup grated Swiss cheese (recommended: Jarlsberg)
- 3/4 pound fresh spinach, washed, trimmed, cooked, and chopped
Dessert - Vanishing Oatmeal Cookies

Heat oven to 350 degrees In large bowl, beat together butter and sugars until creamy
- 1 cup (2 sticks) of butter softened
- 1 cup brown sugar, firmly packed
- 1/2 cup granulated sugar
- 2 eggs – room temperature
- 1 t. vanilla extract
- 1 1/2 cups all-purpose flour
- 1 t. baking soda
- 1 t. ground cinnamon
- 1/2 t. salt (optional)
- 3 cups Quaker Oats (Quick or Old Fashioned, uncooked)
- 1 cup raisins

In a small bowl, beat the cream cheese, mustard and horseradish until blended
- 1 package (8 ounces) cream cheese, softened
- 3 tablespoons spicy brown mustard
- 1/4 teaspoon prepared horseradish
- 5 flour tortillas (10 inches), room temperature
- 7 packages (2 ounces each) thinly sliced deli corned beef
- 15 thin slices Swiss cheese
- 1 can (14 ounces) sauerkraut, rinsed and well drained
