Cheese Fondue Casserole

Directions Preheat oven to 350 degrees F
- Nonstick cooking spray
- 3 cups dried elbow macaroni (12 ounces)
- 3 cups shredded Swiss cheese (12 ounces)
- 2 1/2 cups shredded Gruyere cheese* (10 ounces)
- 5 tablespoons all-purpose flour
- 3 cloves garlic, minced
- 2 cups chicken broth
- 3/4 cup dry white wine
- Salt
- Ground black pepper
- 8 ounces Swiss cheese, cubed
- 1 3/4 cups crushed saltine crackers (36)
- 3 tablespoons butter, cut up
Three-Cup Chicken

Heat a wok over high heat, and add 2 tablespoons sesame oil
- 3 tablespoons sesame oil
- 1 2-to-3-inch piece of ginger, peeled and sliced into coins, approximately 12
- 12 cloves of garlic, peeled
- 4 whole scallions, trimmed and cut into 1-inch pieces
- 3 dried red peppers or 1 teaspoon red-pepper flakes
- 2 pounds chicken thighs, boneless or bone-in, cut into bite-size pieces
- 1 tablespoon unrefined or light brown sugar
- 1/2 cup rice wine
- 1/4 cup light soy sauce
- 2 cups fresh Thai basil leaves or regular basil leaves

Blackberry Croissant Breakfast Bake

Arrange a rack in the middle of the oven and heat to 350°F
- 8 croissants, cut or torn into 2-inch pieces
- Butter or cooking spray
- 1 pint blackberries (about 3 cups)
- 4 cups (1 quart) whole milk
- 6 large eggs
- 2/3 cup granulated sugar
- 2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
- 1/8 teaspoon salt
Onion, Cheddar & Bacon Potato Cakes

In a small saute pan heat over medium heat the olive oil over medium heat
- 2 tbsp olive oil
- 1 small red onion, finely diced
- 3 cloves minced garlic
- 4 cups cold mashed potatoes
- 1 beaten egg
- 4 rounded tablespoons flour
- 1/4 cup chopped green onion
- 2 tbsp chopped parsley
- 1/2 tsp black pepper
- 6 slices cooked, thick cut bacon, chopped
- 1 cup diced cheddar cheese
HUDSON'S MAURICE SALAD

- DRESSING:
- 2 t. white vinegar
- 1 1/2 t. lemon juice
- 1 1/2 t. onion juice
- 1 1/2 t. sugar
- 1 1/2 t. Dijon mustard
- 1/4 t. dry mustard
- 1 c. mayonnaise
- 2 T. chopped fresh parsley
- 1 hard cooked egg, diced
- salt to taste
- SALAD INGREDIENTS:
- 14 oz. ham, cut into strips
- 14 oz. cooked turkey breast, cut into strips
- 14 oz. Swiss cheese, cut into strips
- 1/2 c. slivered, sweet gherkin pickles
- 1 head Iceberg lettuce, shredded
- 12-16 pimento stuffed green olives
