Butter Lettuce With Shallot Vinaigrette

Use a dish towel to make a nest on the counter for a large mixing bowl; this will make the vinaigrette prep easier
- 1 medium shallot, minced
- 1/2 teaspoon kosher salt, or more as needed
- 2 tablespoons red wine vinegar
- 1/2 teaspoon dried oregano
- 2 teaspoons Dijon mustard
- 1/4 cup mild olive oil
- Torn leaves from 1 large or 2 small heads butter or Bibb lettuce
Maine Shrimp Chowder

1. Peel the heads and shells off the shrimp, reserving both for the shrimp broth
- 3 lbs. shell-on, head-on Maine shrimp
- 1 (4 oz.) slab bacon, cut into 1/4" pieces
- 3 medium russet potatoes (about 1 pound), quartered lengthwise and sliced crosswise into 1/2" pieces
- 1 large leek, white part only, cut into 1/4" pieces
- 3 tbsp. butter
- 3/4 cup heavy cream
- Salt and freshly ground black pepper
- 1 pinch cayenne pepper
- 2 tsp. snipped chives
Farmstead Cheesemonger's Mac 'n Cheese

THE CHEESE: Mix all the cheeses in a large bowl; set aside 1 cup for topping the casserole
- 1 1/2 cups coarsely grated Gruyère cheese
- 1 1/2 cups coarsely grated very sharp cheddar cheese (about 6 ounces)
- 1 1/2 cups diced rindless ripe Brie (cut from 1-pound wedge)
- 5 tablespoons butter, divided
- 1/4 cup all purpose flour
- 2 teaspoons chopped fresh thyme leaves
- 3/4 teaspoon (scant) nutmeg
- 1 quart whole milk
- 1 3/4 cups fresh breadcrumbs made from crustless French bread
- 1 pound penne pasta
Chai Tea Eggnog Cookies

1 Heat oven to 350°F. Line cookie sheets with cooking parchment paper
- 1 tea bag chai tea
- 1 pouch Betty Crocker™ sugar cookie mix
- 1/2 cup butter, melted
- 1 egg
- 1/4 cup eggnog (do not use canned)
- Cinnamon-sugar
- 1 cup powdered sugar
- 1/2 teaspoon freshly grated nutmeg

- 1 cup butter, room temperature
- 1 1/2 cups brown sugar
- 2 eggs
- 2 tsp vanilla
- 1 tsp baking soda
- 1 tsp kosher salt
- 1 1/2 cups graham cracker crumbs
- 2 1/4 cups flour
- 2 cups chopped Milk Chocolate Bars (about 6 bars)
- 1 1/2 cups mini marshmallow
- 8-9 Giant Roasters Campfire Marshmallows
Overnight Baked Croissant French Toast

Grease a small baking pan with butter (I just used a small loaf pan)
- 6 large croissants, a few days stale
- 6 eggs
- 1-1/2 cup milk or cream (I use cream)
- 1/2 cup sugar
- 2 tablespoon vanilla extract
- cinnamon or nutmeg
Old South Coca Cola Pork Loin

Combine all the ingredients except for the meat, to form a marinade
- 1/4 cup soy sauce
- 1 cup Coca-Cola
- 1/2 cup dark brown sugar
- 2 tablespoons Dijon mustard
- 3 tablespoons oil
- 2 tablespoons Worcestershire sauce
- 1/3 cup ketchup
- 2 cloves garlic, minced
- 1 tablespoon dry mustard
- 2 tablespoons balsamic vinegar
- 1 teaspoon ginger
- 1 teaspoon thyme, crushed
- 5 pounds pork loin roast, boned
- Coca-Cola Sauce
- 1 cup brown sugar
- 1 tablespoon cornstarch
- 1/2 teaspoon dry mustard
- 2 tablespoons butter
- 1/3 cup balsamic vinegar
- 2/3 cup Coca-Cola
- Sea salt and fresh ground pepper
- Mix together all ingredients in sauce pan; simmer and stir to thicken. Brush or spoon glaze on meat frequently during cooking. You can also serve any remaining sauce with the sliced pork if you like.
EGG "McMuffin Casserole

Preheat over to 325 degrees F
- 4 English muffins, split *I used Nature's Own 100 calorie multi-grain
- 6 oz Canadian bacon
- 1 cup cheddar cheese *I used a blend of cheeses
- 4 eggs *I used half Egg Beaters & 2 Eggland's Best eggs
- 1 1/4 cup skim milk
- salt
- pepper

- 2 cups Parmesan cheese, grated, shredded or shaved - or, add half Gorg.?
- 2 eggs, lightly beaten
- 1 C milk, slightly heated

Crab Stuffed Mushrooms with Garlic and Gouda

Instructions Pre-heat oven to 350 degrees F and line a baking sheet with foil
- 25-30 button mushrooms [I used three 8 oz containers]
- 1/4 cup diced red pepper [green works too!]
- 1/4 cup diced celery
- 1/4 cup diced onion
- 3 button mushrooms, chopped
- 3 cloves of garlic, minced [around 2 TBSP]
- 1/2 TBSP butter
- 1/2 tsp old bay seasoning blend
- 1/4 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp paprika, plus extra for topping
- salt and pepper, to taste
- 4 oz lump crab meat [found in the refrigerated seafood section]
- 1/2 cup gouda cheese, plus extra for topping
- 1/4 cup panko breadcrumbs
