First, crack 3 eggs into a medium bowl
- 3 large eggs
- 1 1/2 tablespoons whole milk (1/2 tablespoon for each egg)
- 1 3/4 teaspoons potato starch or cornstarch (1/2 + 1/8 teaspoon for each egg)
- Salt to season
- 3 tablespoons unsalted butter (1 tablespoon for each egg)

Instructions Prepare the vanilla sponge cake according to the recipe below

- 150 ml double cream
- 130 g mascarpone cheese
- 75 ml Marsala wine
- 2 tbsp icing sugar
- 1 tsp vanilla extract
- 100 ml boiling water
- 1 tbsp instant coffee
- 75 ml Marsala wine
- 30 g unsalted Lurpak butter
- 150 ml double cream
- 100 g dark chocolate (70% cocoa solids), broken into small chunks
- 1 tbsp golden syrup or light, runny honey
- 1 tbsp milk
- white chocolate, shaved into curls with a peeler
- cocoa nibs
- 5 large eggs, separated
- 100 g granulated sugar
- 1 tsp vanilla extract
- 75 g unsalted Lurpak butter, melted and cooled to room temp.
- 100 g plain flour
- 25 g cornflour (corn starch)
- icing sugar, for dusting + rolling

In a bowl mix the egg, melted butter or evo oil, sugar, salt, vanilla, lemon zest and vinegar
- 1 large or medium egg
- 1 tbsp melted butter or extra virgin olive oil
- 1 – 2 tbsp sugar
- 1 pinch of salt
- 1/4 tsp vanilla extract
- 1 pinch of finely grated lemon zest (only the yellow part) or 1 drop of lemon essential oil (organic)
- 1 tbsp apple vinegar (plain vinegar or grappa also works well)
- ≈1 – 2 cups all-purpose flour plus more for the working area
- powdered sugar to garnish as needed
- oil to fry (peanut, corn, sunflower…) as needed
