Cream Cheese Cookies

Position an oven rack in the center of the oven and preheat to 325 degrees F
- 2 3/4 sticks (1 cup plus 6 tablespoons) unsalted butter, at room temperature
- 1 teaspoon pure vanilla extract or vanilla bean paste
- One 8-ounce package cream cheese, 6 ounces at room temperature, 2 ounces frozen
- 1 1/4 teaspoons kosher salt
- 4 cups confectioners' sugar, sifted
- 1 large egg yolk
- 3 1/2 cups all-purpose flour, plus more for flouring (see Cook's Note)
- 2 tablespoons whole milk, plus more if needed
- Very finely grated lime zest or finely minced cranberries, for garnish, optional
Easy Egg Custard

1. Preheat oven to 300°F
- 2 cups whole milk
- 2 eggs (preferably free-range)
- 2 egg yolks
- 1/3 cup sugar
- 1 teaspoon vanilla extract
- Freshly grated or ground nutmeg
Bearnaise Sauce

In a small saucepan combine the shallots, tarragon, wine and vinegar
- 2 tbsp shallots or green onion, finely chopped
- 1 tbsp fresh tarragon, finely chopped
- 2 tbsp white wine vinegar
- 2 tbsp dry white wine (plus a glass or two for you!)
- 5 egg yolks at room temp.
- 1/2 tub of 8oz Meadow Butter, cut into pieces
- fresh lemon juice
- pinch of sea salt
- pinch of pepper
Camembert Carbonara

Cut and then replace the top of the camembert, placing it in the center of a springform pan
- 1 camembert
- 9 oz spaghetti
- 7 oz bacon
- 1 cup grated parmesan
- 4 eggs
- cherry tomatoes
- fresh basil
Cabernet Reduction Sauce

Lightly sauté shallots, garlic, rosemary, and peppercorn
- 1 bottle Harris Ranch Cabernet wine
- 2 sprigs rosemary
- 1 shallot, sliced
- 3 garlic cloves, minced
- 1/2 tsp. black peppercorn
- 2 tbsp. olive oil
- 4 cups demi-glace
- 4 tbsp. unsalted butter, cold

- 1/2 c. dry white wine
- 1/2 c. parsley sprigs
- 1/4 c. white vinegar
- 1 sm.onion, quartered
- 2 large garlic cloves
- 2-1/2 tsp. dried tarragon, crushed
- 1/4 tsp. dried chervil, crushed
- 1/8 tsp. pepper
- 1 cup Best Foods Mayonnaise
Danish Aebleskiver

Apple aebleskivers: Sauté peeled apple slices with butter, brown sugar and cinnamon or used canned pie filling
- 2 cups all-purpose or cake flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 3 large eggs
- 2 cups buttermilk

- powdered sugar

Sift together flour, sugar, salt, baking powder and baking soda
- Brush on top:
- 4 c. sifted flour
- 1/4 c. sugar
- 1 tsp. salt
- 1 tsp. double acting baking powder
- 1 tsp. baking soda
- 2 tbsp.caraway seeds
- 1/4 c. butter
- 2 c. seedless raisins
- 1 1/3 c buttermilk
- 1 egg
- 1 egg yolk, slightly beaten
Mim’s Lasagne

Saute garlic and red onion in olive oil until softened
- 2 cloves garlic, minced
- 1/4 c. olive oil
- 1 large red onion, chopped
- 1 lb. ground chuck
- 1 lb. bulk sweet Italian sausage
- 2 c. sliced cremini mushrooms
- 1/2 c. fresh parsley, chopped
- Salt and Pepper to taste
- 1-6 oz. tomato paste.
- 1 tbsp. sugar
- 1- 24 oz.. can San Marzano tomato puree
- 1/2 c. red wine, optional
- 1 package cooked wide lasagne noodles
- 1 lb. fresh whole milk ricotta (or more!) Calabro is the best!
- 1 lb. whole milk mozzarella, shredded (or more!)
Cheese Quesadilla

Heat olive oil in a pan. Add sliced mushrooms to the hot pan and sauté until golden brown, stirring occasionally
- A handful of grated Cheese
- 2 cremini mushrooms - sliced
- Olive oil
- A large handful of fresh spinach
- 2 flour tortillas, 6-7″ diameter
- Salt and pepper to taste
- Sliced olives
