- 6 cups chicken stock
- 1 tbsp. saffron threads
- 3 tbsp. unsalted butter
- 2 small yellow onions, minced
- 2 cups Arborio rice
- 1 cup dry white wine
- 2 oz. raw bone marrow (optional)
- 1 ⁄2 cup grated Parmesan
- Kosher salt and freshly ground black pepper, to taste

Sift the flour into a bowl & rub in the butter
- 1 3/4 cups all-purpose Flour
- 2 Tablespoons butter
- 4 Teaspoons granulated sugar
- 2 eggs
- Pinch of Salt
- Grated rind of 1/2 Lemon
- 2-1/2 tablespoons wine
- Oil or Crisco for deep-frying
- Confectioners Sugar

Shrimp Sandwiches with Tarragon-Caper Mayonnaise

• Mix first 5 ingredients and 1/4 teaspoon hot sauce in medium bowl
- 1/3 cup mayonnaise
- 2 tablespoons drained capers, finely chopped
- 1 1/2 tablespoons grated sweet onion (such as Vidalia or Maui)
- 1 tablespoon chopped fresh tarragon
- 1/4 teaspoon celery seeds
- 1/4 teaspoon (or more) hot pepper sauce
- 1/2 cup finely chopped celery heart with leaves
- 2 tablespoons (1/4 stick) butter, room temperature
- 12 small (3-inch round) soft sandwich rolls or 6 hot dog buns, split horizontally
- 1 pound cooked peeled deveined large shrimp, each cut horizontally in half
- Tomato slices (optional)
- Avocado slices (optional)
- Thinly sliced butter lettuce (optional)

- 1 cup vanilla ice cream, slightly softened
- 4 large peanut butter cup candies, roughly chopped

Ham Crepes

Use basic crepe recipe:Combine flour, salt and sugar in a mixing bowl and make a well in the center
- Ingredients:
- 4 T butter
- 4 T flour
- 2 C milk
- 2 c shredded honey ham
- 2 c shredded Jarlsberg
- Basic Crepe Batter
- 1 1/4 cups all-purpose flour
- pinch salt
- 1 egg, lightly beaten
- 11/4 cups milk
- butter or pan spray for greasing pan
- Preparation:
- Combine flour and salt in a mixing bowl and make a well in the center.
- Pour in the egg and milk and whisk until smooth.
- Allow batter to rest, refrigerated at least 2 hours.
- Mustard Sauce:
- Mostly Mayonnaise with a little yellow mustard and about as
- much sugar. That is exactly what the waiter told us when
- we asked him. It is delicious
- Note - Always use a honey ham or they will be salty

- 4 cups (510 g | 1 lb. 2 oz) all-purpose flour* (do not use bleached all-purpose)
- 2 teaspoons kosher salt

- 2 to 3 teaspoons sugar (I use 2, my mom uses 3 — difference is negligible)
- 2 teaspoons active-dry yeast***
