BAKE the potatoes: Preheat the oven to 400F
- 8 medium potatoes, scrubbed and dried (russet potatoes recommended)
- 2 Tbls olive oil
- 1-2 Tablespoons Montreal Steak Seasoning* (or coarse salt and pepper)
- 8 slices bacon, cooked and crumbled
- 2 cups sharp cheddar cheese, shredded (I used 3 cups, total, reserving 1 cup)
- 1 cup mayonnaise
- 1 cup sour cream
- 5-6 green onions, sliced
- salt and pepper to taste

Instructions FILLING: Heat oil in a skill or wok over high heat
- Filling:
- 1 tbsp oil
- 2 garlic cloves , finely chopped or minced
- 400 g / 13 oz pork mince (ground pork), or chicken or turkey
- 6 dried shiitake mushrooms soaked in boiling water OR 8 fresh (Note 1)
- 1 1/2 cups shredded carrot (1 large or 2 small)
- 1 1/2 cups (heaped) bean sprouts
- 1 1/2 cups (packed) shredded green cabbage (any type is fine)
- 1 tsp cornflour / cornstarch
- 1 1/2 tbsp Oyster Sauce
- 2 tsp soy sauce (light or all purpose is best, dark is also ok)
- Spring Rolls:
- 15 – 20 spring roll wrappers, defrosted (21.5 cm / 8” squares) OR 35 - 40 small spring roll wrappers (Note 2)
- 2 tsp cornflour (for sealing rolls)
- 1 tbsp water (for sealing rolls)
- Oil for frying (I use vegetable) OR oil spray for baking (I use canola)
- Sweet and Sour Sauce (makes ~ 2/3 cup):
- 2 tsp cornflour/ cornstarch
- 2 tbsp water
- 1/2 cup apple cider vinegar
- 1/3 cup brown sugar (adjust to taste)
- 2 tbsp tomato ketchup
- 2 tsp soy sauce

- 2 cups chicken stock
- 1/2 teaspoon Tabasco Sauce
- 1 1/2 tablespoons heavy cream

Shrimp Cocktail Recipe

If you are using frozen shrimp, the safest way to defrost them is in a bowl of ice water in the refrigerator
- For the shrimp:
- 2 tablespoons Old Bay Seasoning
- 1 lemon, halved
- 1 teaspoon granulated garlic
- 1 teaspoon garlic
- 1/2 teaspoon chili powder
- 1 teaspoon salt
- 24 extra large shrimp (more if you are using smaller shrimp)
- For the cocktail sauce:
- 1/2 cup Heinz chili sauce*
- 1 cup ketchup
- 1 tablespoon horseradish
- 1 dash Worcestershire sauce
- 1/2 lemon, juiced
- 1/2 teaspoon Tabasco
- 1/2 clove garlic, finely minced
- 1 tablespoon cilantro, chopped
- * The chef specifically recommends Heinz chili sauce – it’s not very spicy and has a nice sweet taste. If you use other type of hot chili sauce, just start with a couple tablespoons first, then taste

- Panko breadcrumbs - 1/2 cup for Shortcut Method or 1 cup for Dredging Method
