Poached Egg on Grilled Ham and Toast

1. Toast bread (I grilled using a counter-top electric grill) and remove to plate
- 1 Raw egg
- 1 Slice bread (I used sandwich wheat)
- 2 Pieces deli sliced ham (I used thin sliced)
- 1 Tsp fresh thyme
- 3 Tbsp tomato soup or salsa (I used homemade tomato soup. See 'Roasted Tomato Basil Soup' recipe)
- 1 Medium pot filled with water (I used a mixture of water, pickled jalepeno juice, olive juice & red wine vinegar)
- Shredded parmesan cheese
- Kosher salt & fresh ground pepper
- Hot sauce (I used Cholula)

- 2 skinless and boneless chicken breasts, butterflied and then cut in half
- Sea salt
- Freshly ground black pepper
- 2 cups all purpose flour, for dredging
- 6 tablespoons unsalted butter
- 5 tablespoons extra-virgin olive oil
- 1/3 cup fresh lemon juice
- 1/2 cup chicken stock
- 1/4 cup brined capers, rinsed
- 1/3 cup fresh parsley, chopped

- 6 ounces chopped bacon
- 1/4 cup flour
- 1 1/2 cups chopped onions
- 3 cups assorted Exotic mushrooms, such as shiitakes, oysters or hedgehogs
- 1 tablespoon chopped garlic
- 1/2 cup dry sherry
- 1 cup peeled, seeded and chopped tomatoes
- 2 cups chicken stock
- 8 quail, breastbone removed and split down the back (4 ounces each)
- Salt
- Cayenne

- 1 1/2 teaspoons kosher salt

- 4 (2-inch thick) veal shanks (I used beef short ribs)
- Salt and freshly ground black pepper
- 1/4 cup instant flour (recommended: Wondra)
- 1/4 cup olive oil
- 1 cup onion, finely diced
- 1/2 cup finely diced celery
- 1/2 cup finely diced carrot
- 1 tablespoon tomato paste
- 1/2 cup white wine
- 3 cloves garlic, peeled
- 1 (14-ounce) can crushed tomatoes
- 2 bay leaves
- 1 teaspoon dried Italian oregano
- 1 teaspoon red pepper flakes
- 1/2 teaspoon fennel seeds

- 1 pound ground beef (I used turkey)
- 2-inch piece ginger, peeled and finely grated
- 2 scallions, chopped
- 2 cloves garlic, minced
- 2 tablespoons soy sauce

- 1/4 cup hoisin sauce
- 1/4 cup chopped peanuts (I used pistachios)

- 1/2 small loaf country-style bread, cut into 1/2 to1-inch cubes (about 1 1/2 cups)

- 1 medium onion, finely diced
- 1 pound sweet Italian turkey sausage, casings removed
- 1 10 to 12-ounce package fresh baby spinach, drained
- 1 6.5-ounce jar oil-packed sun-dried tomatoes, drained and coarsely chopped
- 2 tablespoons chopped fresh basil
- 1/2 teaspoon kosher salt, plus extra for seasoning
