POTATO BURGER BUNS Published July 1, 2012
- INGREDIENTS
- 1 pound russet potatoes , peeled and cut into 1-inch pieces
- 2 tablespoons unsalted butter , cut into 4-inch pieces
- 2 1/4 cups (12 1/3 ounces) bread flour
- 1 tablespoon sugar
- 2 teaspoons instant or rapid-rise yeast
- 1 teaspoon salt
- 2 large eggs , 1 lightly beaten with 1 teaspoon water and pinch salt
- 1 tablespoon sesame seeds (optional)

- Pastry Dough:
- Ingredients
- 1 1/2 cups of whole wheat pastry flour
- 1/4 teaspoon of sea salt
- 1/4 cup of corn oil, less may be needed
- 1/4 cup of cold rice milk or water
- Pecan Surprise:
- 1/3 cup of barley malt or maple syrup
- 2 tablespoons of corn oil
- 1/2 cup pecans, chopped
- Whole toasted pecans for garnish
- Pumpkin Filling:
- 1 pound of firm tofu
- 1 (16-ounce) can of pumpkin puree (do not use fresh pumpkin because it is too watery)
- 1 cup of maple syrup
- 1 tablespoon of barley malt or molasses
- 1/2 teaspoon of sea salt
- 1 teaspoon of pure vanilla extract
- 1 teaspoon of ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- TOFU WHIPPED CREME:
- 1/2 pound of firm tofu
- 1/2 pound of silken tofu
- 1/4 cup of maple syrup
- 1 tablespoon of pure vanilla extract
- 1 to 2 tablespoons of water
- A few grains of sea salt

- 2 cups mushrooms, sliced (Chinese wood ear mushrooms or shiitake are best)
- 1 small can bamboo shoots
- 1 small can water chestnuts
- 2 tbsp soy sauce
- 1/2 tsp pepper
- 1 tsp hot sauce
- 2 tbsp vinegar
- 3 cloves garlic, minced
- 1/2 cup scallions (green onions), sliced
- 2 tbsp chili oil

- INGREDIENTS
- 3/4 cup maple syrup (see note)
- 1/4 cup molasses, light or mild
- 2 tablespoons bourbon or brandy
- 1/8 teaspoon ground cinnamon
- pinch ground cloves
- pinch cayenne pepper
- 1/4 cup cornstarch
- 2 tablespoons sugar
- 1 tablespoon table salt
- 2 teaspoons ground black pepper
- 2 pork tenderloins (1 1/4 to 1 1/2 pounds each) (see note)
- 2 tablespoons vegetable oil
- 1 tablespoon whole-grain mustard

- 1 cup cornmeal
- 1/4 cup sugar (I used 1/2 cup)
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cups milk
- 1/2 cup unsalted butter, melted and cooled (I used oil)
- 1 large egg
- Opt: up to 1 cup total of add ins
- Cornbread isn't just an accompaniment to chili anymore. It can be dressed up to go with most any dish. Stir in any of these extra ingredients, or experiment with some of your own.
