Ryan's Meatballs

"I'm A Meatball" weekend
- 1 lb ground beef
- 2 eggs
- 1/4 C onion
- 1 T garlic
- 1/2 t parsley
- 1/2 t salt
- 1/2 t pepper
- 1/2 C bread crumbs
Meatballs made w/ sausage

Mix all ingredients well in large bowl
- 2 C seasoned bread crumbs
- 1 1/2 C milk
- 1 lb sweet italian sausage, castings removed+3 links of hot sausage
- 1 1/2 C Parmesan cheese, grated
- 1 C fresh parsley
- 4 lg eggs, slightly beaten
- 6 t of chopped garlic cloves
- 2 t salt
- 4-5 lbs 80 percent lean ground beef
Lemon Basil Pesto

mix all in food processor
- 2 packed C basil leaves
- 1/3 C toasted pine nuts
- 2 T fresh lemon juice
- 1 clove garlic, smashed
- zest of 1 lg lemon
- 3/4 t salt
- 1/4 t pepper
- 1/3 C olive oil
- 1/3 C parm cheese
Homemade Cranberry Bread

In a bread baking pan, combine orange juice, sugar substitute, salt, flour, oats, dry milk powder and yeast
- 1 1/4 c. unsweetened orange juice
- Sugar substitute to equal 3/4 c. sugar, suitable for baking
- 1/2 tsp. table salt
- 3 c. bread flour
- 1/4 c. quick oats
- 1/4 c. nonfat dry milk powder
- 1 1/2 tsp. active dry yeast
Chocolate chip brownie cheesecake

Mix brownie mix as directed
- Brownie mix
- 16 oz cream cheese
- 1 C sugar
- 1 t van x
- 1 C whipped cream
- 1 C mini choco chips
- Sliced strawberries
Baked Ziti

Heat oven to 375 degrees. Cook pasta according to package directions for 9 minutes; drain
- 6 cups(16 oz) SAN GIORGIO Ziti,uncooked
- 3 cups(28oz jar) spaghetti sauce, divided
- 1-3/4 cups(15oz) ricotta cheese
- 2 cups(8oz) shredded mozzarella
- 1/4 cup chopped fresh parsley or 1 tbsp. dried parsley flakes
- 1 egg
- 1 tsp. dried oregano leaves
- 1/2 tsp. garlic powder
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 3 tbsps. grated parmesan

- 1/2 c. yellow mustard
- 1/3 c. brown sugar
- 3 T vegetable oil
- 2 T cider vinegar
- 1 lb. chicken breasts

Heat apples and water to boiling over medium heat; reduce heat
- 8 medium cooking apples, each cut into fourths
- 1 C water
- 1 C packed brown sugar or 3/4 C granulated sugar
