Chicken Tandoori

A weight watchers core recipe
- 3/4 cup plain yogurt
- 1 small red onion, finely chopped
- 2 Tbsp fresh ginger
- 2 Tbsp white wine vinegar (rice vinegar works too)
- 1 Tbsp dijon mustard
- 1 garlic clove, minced
- 2 tsp paprika
- 1 tsp ground cumin
- 1/2 tsp ground coriander
- 1/2 tsp cinnamon
- 1/8 tsp cayenne
- 8 (1/4 lb) chicken cutlets
Blueberry Crumble

Super quick and very tasty
- 2 1/5 cups fresh or frozen blueberries (or other fruit)
- 1 Tablespoon sugar
- 1 Tablespoon whole wheat or all purpose flour
- 1 Tablespoon orange juice
- 1 cup crumble topping
- CRUMBLE TOPPING
- 1 1/2 cups old-fashioned rolled oats
- 3/4 cups pecans or almonds, chopped
- 1/2 cup brown sugar
- 1/3 cup whole wheat or all purpose flour
- 3/4 teaspoon ground cinnamon
- 5 Tablespoons canola oil

I never would have guessed that there would be a day that I would enjoy Lima beans, until I made this recipe
- 1 10 oz. packeage thawed
- 1 Tablespoon butter
- 1 teaspoon olive oil
- 1 small red onion, diced (1 cup)
- 1 clove garlic, minced (1 tsp.)
- 1 cupcherry tomatoes, halved
- 2 Tablespoons fresh parsley
- 2 Tablespoons chopped fresh basil
- 1 Tablespoons white balsamic vinegar
- (I've actually only used regularly balsamic vinegar for this recipe, and it's worked out great)
Shawn's Favorite Potato Salad

Place potatoes in a large saucepan with salted water and cover
- 1 1/2 pounds red or waxy potatoes
- 1 inner celery rib, minced
- 2 Tablespoons grated onion
- 1/4 cup sliced pimiento-stuffed green olives
- 2/3 cup mayonnaise (can be a vegan mayo)
- 1 Tablespoon white wine vinegar
- 1 teaspoon Dijon mustard
- salt and freshly ground black pepper

Gold and Black Bean Salad

This is a simple and satisfying summer salad
- 2 15-ounce cans black beans, drained and rinsed
- 2 cups corn kernels cooked and cooled
- 1 small yellow pepper, seeded and chopped
- 2 shallots, minced
- 2 Tablespoons fresh lime juice
- 1/4 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne
- 1/4 cup olive oil
- 2 Tablespoons minced fresh cilantro leaves
Chicken Packets with Swiss Chard and Tomatoes

Make the packets ahead of time for a quick, throw in the oven meal
- 2 Tablespoons minced fresh dill
- 2 teaspoons grated orange or lemon peel
- 1 garlic clove, minced
- 3/4 teaspoon salt
- 1 cup cherry tomatoes, halved
- 1 Tablespoon olive oil
- 4 skinless, boneless chicken breast halves, thinly sliced crosswise
- 4 cups (firmly packed) Swiss Chard or Spinach leaves
Chocoate 'Tato Cake

- CAKE:
- 4 ounces sweet cooking chocolate
- 1 cup mashed potato flakes
- 1 cup boiling water
- 1 1/2 cups all-purpose flour
- 1 1/4 cups sugar
- 1 1/4 teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon vanilla
- 1/2 cup margarine, softened
- 1/2 chopped pecans, if desired
- GLAZE:
- 2 ounces sweet cooking chocolate
- 1 Tablespoon water
- 1 Tablespoon butter
- 1/2 cup powdered sugar
- 1/4 teaspoon vanilla
- dash salt
Savory Lentil Soup

- 2 Tablespoons olive oil
- 2 cups finely diced onion
- 3 large garlic cloves
- salt and freshly milled pepper
- 3 Tablespoons tomato paste
- 1/3 cup finely diced celery
- 1/3 cup finely diced carrot
- 2 bay leaves
- 1/2 cup chopped parsely
- 1 1/2 cups lentils, sorted and rinsed
- 1 Tablespoon Dijon mustard
- 1 Tablespoon sherry vinegar or red wine vinegar
- chopped celery leaved and parsley
Mahi Mahi with Asian Sauce

- 2 pounds Mahi Mahi Steaks

- 1 cup green onions
- 1 teaspoons fresh ginger

- 3 teaspoons sesame oil
- 2 Tablespoons oyster sauce
- 2 Tablespoons orange juice
Veggie Pizza

An appetizer that my grandmother used to make, and it would quickly disappear once it was set out
- 2 packages of crossiant rolls (in the cardboard tubes)
- 18 oz. cream cheese
- 1 cup mayonase
- 1 package of Ranch dip seasoning
- finely chop your choice of: red pepper, green pepper, cauliflower, carrots, broccoli and shredded cheddar cheese
