Sweet Potato Pie

Shawn and I love sweet potato pie
- 4 large sweet potatoes
- 2 cups sugar
- 1 stick butter
- 1 pinch of cinnamon
- 1 pinch of nutmeg
- pie crust
Rocking Peanut Noodles

This is a great potluck "pleaser
- 8 oc. spaghetti or other noodles
- 1 bunch of green onions, sliced
- 2 Tablespoons sesame oil
- 1 tsp. minced fresh ginger
- 1/3 cup peanut butter
- 1/4 cup soy sauce
- 1/4 cup hot water
- 1 Tablespoons cider vinegar
- 1 teaspoon white sugar
- 1/4 teaspoon crushed red pepper flakes
Tomato Aspic

In all honesty, this is one of those recipies that I really enjoy that isn't always a good sell to others
- 1 3/4 cup of V8
- 1 package of lemon jello
- 2 Tablespoons of fresh lemon juice.
Vegan Scrambled "Eggs"

When Shawn and I decided to be vegan for 3 weeks, we enjoyed this for a number of breakfasts
- 2 teaspoons onion powder
- 1 teaspoons garlic powder
- 1/2 teaspoon tumeric
- 1/4 teaspoon pepper
- 1/4 teaspoon salt
- 1 teaspoon parsley flakes
- 1 pound tofu, more or less depending on what you want
- Vegetable oil
- 1 serving = 4 ounces tofu to 1 1/4 teaspoon of seasoning.
Three-Bean Salad

My Grandma Lattin often made this recipe, especially in the summer time
- 1 pound can cut green beans
- 1 pound can cut wax beans
- 1 15 ounce can dark red kidney beans
- 1/2 cups chopped green pepper
- 1/2 cup sugar
- 2/3 cup vinegar
- 1/3 cup vegetable oil
- 1 teaspoon salt
- 1/4 teaspoon pepper
Hungarian Pork Chops with Baby Spinach

Quick, easy to prepare meat dish from Weight Watchers
- 4 (1/4 lb.) boneless pork loin chops, trimmed
- 1/2 tsp salt
- 1/4 tsp. fresh ground pepper
- 3/4 cup chicken broth
- small onion
- 1 (5-6 oc.) bag baby spinach
- 2 Tbsp. paprika
- 2 Tbsp. sour cream
Katie's Carrot Suprise

Heat olive oil over medium-high heat, add garlic and stir a little
- 3 Tbs. olive oil
- 4 garlic cloves chopped
- 5 large carrots cut into rounds
- 1/4 tsp. salt
- pinch sugar
- 1/2 cup water
- 6 green onions, cut into thin rings
- 4 Tbs. mayonnaise
- 2 Tbs. fresh cream (milk works)
- 2 Tbs. chopped fresh mint leaves
- 1/2 tsp. cayenne (optional)
Incredible Chicken Cacciatore

This Chicken Caccitore is just incredible
- 1/4 cup olive oil
- 2 red or green bell pappers, seeded and cut into 1 inch wide strips
- 1/2 pound mushrooms, cut into 1/4 inch thick slices
- 3 pound free-range chicken, cut into serving size pieces
- kosher salt and freshly ground pepper
- 1/2 cup dry white wine
- 2 cloves garlic, roughly chopped
- 2 1/2 cups roughly chopped onions (about 2 medium sized onions)
- 1 cup canned whole plum tomatoes, or your own favorite tomato sauce
- (I prefer to purchase a package of chicken breasts with the bones and thighs because it's just easier than buying a whole chicken and cutting it up.)
