Preheat oven to 475. Heat oil in heavy medium skillet over medium heat
- 1 Tbs vegetable oil
- 1/2 onion, chopped
- 1 tsp minced garlic
- 1 cup canned black beans, rinsed and drained
- 2 tsp chili powder
- 4 plum tomatoes, seeded and diced (about 1 cup)
- 1 jalapeno chili, seeded and minced
- 2 greed onions, chopped
- 36 tortilla chips
- 1 cup (packed) grated sharp cheddar cheese (about 4 oz)
- 1 cup (packed) grated Monterey Jack cheese (about 4 oz)
- 1 small avocado, peeled and chopped
- 1/4 cup minced fresh cliantro
Apple Crisp II

Preheat oven to 350 degrees F (175 degree C)
- 10 cups all-purpose apples, peeled, cored and sliced
- 1 cup white sugar
- 1 tablespoon all-purpose flour
- 1 teaspoon ground cinnamon
- 1/2 cup water
- 1 cup quick-cooking oats
- 1 cup all-purpose flour
- 1 cup packed brown sugar
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 cup butter, melted
Barbecue Sauce

Saute onion in butter. Add remaining ingredients and simmer for 30 minutes
- 2 Tbs butter
- 1 medium onion, minced
- 2 Tbs vinegar
- 2 Tbs brown sugar
- 1/4 cup lemon juice
- 1 cup ketchup
- 3 Tbs parsley flakes
- 1-1/2 tsp prepared mustard
- 1-1/2 tsp worcestershire sauce
- 1/2 cup water
- 1/2 tsp salt
- 1/8 tsp pepper
Backyard Beer Burgers

Heat coals or gas grill. Mix all ingredients except buns and cheese
- 1-1/2 lbs ground beef
- 1 small onion, finely chopped (1/4 cup)
- 1/4 cup beer (or burgundy)
- 1 Tbs Worcestershire sauce
- 1 tsp salt
- 1/4 tsp pepper
- 2 cloves garlic, finely chopped
- 6 rye or whole wheat hamburger buns, split
- Ketchup, if desired
- Pickle planks, if desired
Green Olive Spread

Combine all ingredients in processor
- 1 cup chopped pitted green olives
- 1/2 cup chopped walnuts
- 1/2 cup chopped parsley
- 1/2 cup chopped green onions
- 1/2 cup chopped onions
- 1/3 cup olive oil
- 3 Tbs fresh lemon juice
- 1/4 tsp dried crushed red pepper
Smoked Salmon Caesar Salad

For dressing: Whisk first 4 ingredients in small bowl

- 1/4 cup red wine vinegar
- 3 Tbs Dijon mustard
- 3 garlic cloves, minced
- 1/4 tsp dried thyme
- 3/4 cup olive oil

- 1 small head romaine lettuce, torn into bite-size pieces
- 1 cup croutons
- 1/2 cup grated Parmesan cheese
- 1/4 lb smoked salmon, cut into strips

Sausage Scramble

Remove casings from sausages and crumble meat into a small frying pan
- 6-8 oz mild Italian sausage
- 1 small onion, chopped
- 1 clove garlic, minced
- 2 cups finely shredded Swiss chard or spinach

- Grated Parmesan cheese

Heat a pot of water to a boil for pasta and add salt to it then pasta
- Salt
- 1 pound penne rigate, pasta with lines
- 2 tablespoons extra-virgin olive oil, 2 turns of the pan
- 2 tablespoons butter
- 1/2 pound andouille sausage, any brand, casing removed and diced
- 4 cloves garlic, chopped
- 1 poblano pepper, seeded and chopped or thinly sliced (1 large jalapeno my be substituted)
- 1 red bell pepper, seeded and chopped
- 2 ribs celery from the heart with greens, chopped
- 1 onion, chopped
- Salt and ground black pepper
- 2 tablespoons all-purpose flour
- 1 cup beer, 1/2 bottle
- 1 cup chicken stock
- 1 (14-ounce) can, crushed tomatoes
- 2 tablespoons hot sauce (recommended: Franks Red Hot or Tabasco) eyeball it
- 2 tablespoons fresh thyme leaves, chopped
- 1/2 pound chicken breast, diced into small pieces
- 1/2 pound medium shrimp, cleaned and tails removed
- 1/4 cup heavy cream, eyeball it
- 2 scallions, sliced

- 1/4 cup packed brown sugar
- 1/3 cup molasses
- 1/4 cup whipping cream
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1 egg
- Lemon Glaze
- 1 cup powdered sugar
- 2 tablespoons butter or margarine, melted
- 1 teaspoon grated lemon peel
- 1 tablespoon lemon juice
Rosemary Chicken Salad Sandwiches

- 3 cups chopped roasted skinless, boneless chicken breasts (about 3/4 pound)
- 1/3 cup chopped green onions
- 1/4 cup chopped smoked almonds
- 1/4 cup plain fat-free yogurt
- 1/4 cup light mayonnaise
- 1 teaspoon chopped fresh rosemary
- 1 teaspoon Dijon mustard
- 1/8 teaspoon salt
