Do-Ahead Mashed Potatoes

Combine potatoes, sour cream, butter, salt, and pepper
- 5 lb potatoes, mashed
- 2 cups sour cream
- 6 Tbs butter
- 2-1/2 tsp salt
- 1/2 tsp pepper
- 1/2 cup crumbs
- 2 Tbs melted butter
Creamy Chicken Tortilla Soup

Combine tomatoes and broth in large saucepan
- 4 10-oz cans Rotel Diced Tomatoes & Green Chiles
- 4 14.5-oz cans chicken broth
- 1 30-oz can refried beans
- 1 cup whole kernel corn
- 4 cups shredded cooked chicken (1.75 lb package of boneless, skinless chicken breasts)
- Fried corn tortilla strips or chips
- Shredded Monterey Jack cheese
Applesauce

- Note: these amounts yield one quart of sauce. Recipe can be easily doubled.
- 8 tart apples
- 1/2 cup water
- 1/3 cup sugar
- dash of salt
- 1 tsp lemon juice
- 1/8 tsp cinnamon
Sesame Chicken With Snow Peas

Whisk 3 tablespoons soy sauce, 2 teaspoons sesame oil and the honey in a bowl
- 5 tablespoons low-sodium soy sauce
- 4 teaspoons toasted sesame oil
- 2 teaspoons honey
- 1 1/4 pounds skinless, boneless chicken breasts, cut into 3/4-inch chunks
- 6 teaspoons canola oil
- 2 scallions, thinly sliced
- 1 tablespoon grated peeled ginger
- 3 cloves garlic, minced
- 1 1/4 cups low-sodium chicken broth
- 3 tablespoons sugar
- 3 to 4 teaspoons cornstarch
- 1 tablespoon rice vinegar
- 1 teaspoon chili paste
- 4 cups snow peas, trimmed
- Cooked brown rice, for serving (optional)
- 2 tablespoons toasted sesame seeds
Beef Pot Pie

Heat oven to 325 degrees. Coat meat with flour, shaking off excess
- 2 lbs beef chuck, trimmed & cut in 1-1/2" pieces
- 1/3 cup flour
- 2 Tbs olive oil
- 1 lb carrots, cut in 2" lengths
- 2 onions, cut in thin wedges
- 1 cup dry red wine
- 2 tsp minced garlic
- 2 tsp salt
- 1/2 tsp each dried marjoram and thyme
- 6 cups mashed potatoes
- 1 Tbs Parmesan cheese
Corned Beef and Cabbage Dinner

Place brisket in a large stockpot; add water and next 5 ingredients (water through garlic)
- 1 (4-pound) cured corned beef brisket, trimmed
- 16 cups water
- 2 cups chopped onion
- 1 cup chopped celery
- 1 cup chopped carrot
- 1 1/2 teaspoons pickling spice
- 3 garlic cloves, peeled
- Cooking spray
- 1 tablespoon caraway seeds
- 1 (2 1/2-pound) head green cabbage, cored and cut into 1-inch strips
- 4 pounds small red potatoes, quartered
- 2 tablespoons chopped fresh parsley
- 2 teaspoons butter
- 2 teaspoons grated lemon rind
- 2 teaspoons fresh lemon juice
- 1/8 teaspoon black pepper
- 1/2 cup dry breadcrumbs
- 1 (5-ounce) jar prepared horseradish, drained and squeezed dry
- 3 tablespoons Dijon mustard
German Meatballs

Combine the first 8 ingredients in a bowl; stir well
- 1/2 pound ground round
- 1/2 pound lean ground pork
- 1/4 cup dry breadcrumbs
- 1 1/2 tablespoons chopped fresh parsley
- 1/4 teaspoon salt
- 1 teaspoon prepared mustard
- 1/2 teaspoon Worcestershire sauce
- 1 egg white, lightly beaten
- Vegetable cooking spray
- 2 garlic cloves, minced
- 1 cup Riesling or other slightly sweet white wine
- 1/2 cup nonfat sour cream
- 1/4 teaspoon pepper

Line bottom of an ungreased 13 x 9 x 2 inch baking dish with 1/3 of the graham crackers
- 1 (14.4 oz) box honey graham crackers
- 2 (3.4 oz) packages French vanilla instant pudding mix
- 3 cups milk
- 1 (12 oz) container frozen whipped topping, thawed
- 1 (16 oz) container ready-to-spread chocolate frosting
