Bring 4 quarts water to boil in large pot
- 2 Tbs extra-virgin olive oil
- 1 lb Italian sausage, cut into 1/2 inch pieces
- 2 garlic cloves, minced
- 1 28 oz can crushed tomatoes
- 1 14.5 oz can diced tomatoes
- salt
- 1 lb ziti or penne
- 2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 Tbs minced fresh parsley

- 2 medium potatoes, chopped
- 2 small yellow onions, chopped
