Bing Cherry Salad

1. Drain cherries and pineapple, reserving 1 1/2 cups juice in a saucepan
- 1 (15-oz.) can Bing cherries (dark, sweet pitted cherries)
- 2 (8-oz.) cans crushed pineapple in juice
- 1 (6-oz.) package cherry-flavored gelatin
- 1 cup cold water
- Mayonnaise (optional)
- Garnishes: poppy seeds, arugula leaves
Pulled Pork Tacos

1. Heat oven to 300° F. Place 2 large sheets of aluminum foil on a work surface, one atop the other
- 2 to 2 1/2 pounds boneless pork shoulder
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 2 teaspoons ground cumin
- 1/2 cup apricot jam or preserves
- 1 jalapeno, seeded and minced
- 1 red onion, roughly chopped
- 8 small flour or corn tortillas, warmed
- 1 cup fresh cilantro leaves
- 1 lime, cut into wedges
Meatball Lasagna

Stir together first 6 ingredients until blended
- 1 (15-ounce) container ricotta cheese
- 1 (8-ounce) container onion-and-chive flavored cream cheese, softened
- 1/4 cup chopped fresh basil
- 1/2 teaspoon garlic salt
- 1/2 teaspoon seasoned pepper
- 1 large egg, lightly beaten
- 2 cups (8 ounces) shredded mozzarella cheese, divided
- 1 (3-ounce) package shredded Parmesan cheese, divided
- 2 (26-ounce) jars tomato basil pasta sauce
- 1 (16-ounce) package egg roll wrappers
- 60 to 64 frozen cooked Italian-style meatballs

Stir-Fried Noodles with Shrimp, Chiles, and Lime

Soak the dried rice noodles
- 3 oz dried wide (pad thai) rice noodles
- 2 Tbs fish sauce
- 2 Tbs granulated sugar
- 1 Tbs soy sauce
- 1 tsp hoisin sauce
- 1 tsp chile-garlic sauce
- 1 Tbs vegetable oil
- 1 tsp minced garlic
- 6 oz medium shrimp, peeled and deveined (to yield 1 cup)
- 1 4-oz can fire-roasted whole green chiles, drained and sliced into long, very thin slivers (to yield 1/2 cup)
- 1-1/2 cups bean sprouts
- 2 Tbs crushed unsalted roasted peanuts
- 1/3 cup coarsely chopped fresh cilantro
- 10 mint leaves, torn into small pieces
- 1 lime, cut into wedges for serving
