Spinach Artichoke Dip

Pressure Cooker Recipe
- 1 package (10 ounces) frozen chopped spinach, thawed and well drained
- 1 (14 ounce) can artichoke hearts, drained and coarsely chopped
- 1 cup light mayonnaise
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup sour cream
- 1/4 teaspoon garlic salt
- 1/4 teaspoon fresh ground black pepper
- Pinch of cayenne pepper
Beef Stroganoff

Season beef generously with salt and pepper
- 2 pounds beef round steak, cut into 1-inch pieces
- 1 tablespoon vegetable oil
- 1 medium onion, chopped
- 2 cloves garlic, minced or pressed
- 2 tablespoons tomato paste
- 1 1/2 cups beef broth
- 1 tablespoon vegetable oil
- 1 tablespoon butter
- 1 package (12 ounces) white mushrooms, sliced
- 2 tablespoons cornstarch
- 3 tablespoons cold water
- 1/3 cup sour cream
- Salt and pepper to taste
- Egg noodles, cooked
Buttter Chicken

Cut the chicken pieces into quarters
- 10 boneless skinless chicken thighs
- 2 (14-ounce) cans diced tomatoes and juice
- 2 jalapeno peppers, seeded and chopped
- 2 tablespoons fresh ginger root, peeled and chopped
- 1/2 cup (1 stick) unsalted butter
- 2 teaspoons ground cumin
- 1 tablespoon paprika
- 2 teaspoons kosher salt
- 3/4 cup heavy cream
- 3/4 cup Greek yogurt
- 2 teaspoons garam masala
- 2 teaspoons ground roasted cumin seeds (roast on the stovetop in a small pan)
- 2 tablespoons cornstarch
- 2 tablespoons water
- 1/4 cup firmly packed minced cilantro
Pork Chop with Mushroom Gravy

Pat chops dry and season liberally with lemon pepper (or your favorite seasoning)
- 4 bone-in thick pork chops
- 2 tablespoons vegetable oil
- 1 1/2 cups water
- 1 can condensed cream of mushroom soup
- Lemon pepper

- 4 large boneless, skinless chicken breasts, cut into bite-sized pieces
- 1/2 cup fresh squeezed lemon juice
- 1/4 cup low sodium soy sauce
- 1/4 cup water
- 1/4 cup brown sugar
- 1/4 cup sugar
- 2 teaspoons rice vinegar
- 1/2 teaspoon ground ginger
- 1/2 teaspoon chili-garlic sauce
- 3 tablespoons cornstarch
- 3 tablespoons cold water
- Zest of one lemon
- 2 green onions, chopped
- Red pepper flakes for garnish, optional

Place the apple pieces, apple juice, sugar and cinnamon in the pressure cooker and stir to combine
- 10 large Jonagold apples*, peeled, cored, and quartered or sliced
- 1/4 cup apple juice or water
- 1/4 cup sugar, optional**

- 2 tablespoons butter
- 1 cup chopped onion
- 1 cup diced carrots
- 1 cup diced celery
- 2 14 oz. cans chicken broth
- 2 large boneless skinless chicken breasts, uncooked and diced
- 6 oz. package Uncle Bens Long Grain & wild Rice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- dash red pepper flakes
- 1 tablespoon dried parsley
- 2 tablespoons cornstarch
- 2 tablespoons water
- 4 oz. cream cheese, cut into cubes
- 1 cup milk
- 1 cup half and half
Lentil Orzo Soup

Select sauté and add oil to cooking pot
- 1 tablespoon vegetable oil
- 1 onion, diced
- 3 carrots, diced
- 5 cloves garlic, minced
- 2 cans (15 oz.) diced tomatoes
- 4 cups chicken broth
- 4 cups water
- 1 1/2 cups brown lentils, rinsed
- 2 teaspoons cumin
- 1 teaspoon garlic salt
- 1/4 teaspoon red pepper flakes
- 2 tablespoons dried parsley
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup orzo
- 2 cups roughly chopped baby spinach
Kalua Pork

- 4 lb Pork Shoulder (Pork Butt) roast, cut in two pieces
- 1 to 2 tablespoons oil
- 1/2 cup water
- 1 tablespoon Hickory Liquid Smoke (I used Wright's)
- 2 teaspoons coarse Kosher salt (or Hawaiian salt)
